How is Cork Harvested for Wine Stoppers?

While cork has many different uses, our favorite use is creating stoppers for our wine bottles! How exactly does the cork get from the tree to your favorite bottle of wine at our Lake of the Ozarks winery? Below we explain the process.

Cork Extraction


Contrary to popular belief, cork extraction is one of the most environmentally-friendly harvesting processes in the world. Not a single tree is cut down to get the cork. Since cork comes from the bark and not the trunk of the tree, harvesting cork does not destroy the tree. The vegetable tissue is stripped off the tree in late spring, early summer. In order to protect itself, the tree quickly forms new layers of cork. The tree is valuable for 170 years or more, even though it could have been stripped 16 times, once every 9 years.

How to Harvest Cork


Retrieving cork from trees is a skill handed down from generation to generation. A special hatchet is used to cut cork from the thick rugged oak tree. However, this cannot be done until after the first 20 years of growth. The outer bark is carefully peeled away as to leave the inner bark completely intact. For manufacturing purposes, the cork is then dried, boiled and dried again before use.

Cork for Wine Stoppers


It appears that the Greeks were the first to seal wine jugs with cork. Following them is the Romans, who used cork for fishing floats and shoes as well as wine stoppers. Dom Perignon, who discovered champagne in 1668 was the first to realize the full potential of cork as a bottle stopper. Before cork, wooden plugs were used. We continue to use cork for wine stoppers today, but other materials are also becoming more popular.

Try These Easter Recipes (with Suggested Wine Pairings)

Easter is a time to gather with family and friends to enjoy a special meal together. Just like the traditional turkey at Thanksgiving, there are certain dishes you will find at many Easter dinners. You will typically find either Ham or Lamb for the main dish. So what wine pairs best with these traditional Easter menu items? Keep reading for some new recipes to try and which of our Lake of the Ozarks wines to pair with each!

Glazed Easter Ham

Wine Pairing: Seven Springs Chardonel

Ingredients: 
  • 1 whole Fully Cooked Bone-in Ham (15-18 pounds) 
  • Whole Cloves 
  • 3 cups Brown Sugar 
  • 1/2 cup Spicy Brown Mustard 
  • 1 can Dr. Pepper or Coke
  • 3 Tbsp Apple Cider Vinegar

Instructions: 
  1. Preheat oven to 325 F. 
  2. Score the surface of the ham in a diamond pattern about 1/8-inch deep. Place cloves in the middle of each diamond. Place the ham in a large roasting pan with a rack, tent it with foil, and bake for 2 to 2/12 hours---or longer, depending on the package directions. (Some hams may require 3 to 3 1/2 hours at a lower temp; just check the package.)
  3. Heat the brown sugar, mustard, vinegar and soda in a small saucepan until bubbly. Cook until reduced and a bit thicker, about 15 minutes.
  4. After about 2 hours of baking time, remove the foil and brush the glaze on the ham in 20 minutes intervals (put the ham back in the oven, uncovered, in between) until it's nice and glossy. Remove from the oven and allow to rest 15-20 minutes before carving.

Garlic and Herb Lamb

Wine Pairing: Seven Springs Syrah

Ingredients: 
  • 1 (5 lb) Leg of Lamb 
  • 3 cloves Garlic, cut into slivers
  • 3 tsp Dried Dill Weed 
  • 1 1/2 tsp Salt 
  • 1 tsp Dried Rosemary, crushed
  • 1/2 tsp Ground Black Pepper

Instructions: 
  1. Preheat the oven to 325 degrees F (165 degrees C).
  2. Puncture the leg of lamb with the tip of a knife just far enough to insert slivers of garlic into the holes. Mix together the dill, salt and rosemary, and rub over the leg of lamb. Place the lamb, fatty side up, on a rack in a shallow roasting pan.
  3. Roast uncovered for 2 to 2 1/2 hours in the preheated oven, to an internal temperature of 155 degrees F (68 degrees C) for medium. Tent with aluminum foil and let stand for 15 to 20 minutes before carving. The lamb will continue to cook a little bit, and the juices will set up better for carving.

Bacon Avocado Deviled Eggs

Wine Pairing: Seven Springs Muscato Sparkling

Ingredients:
  • 12 Eggs
  • 1/2 cup Mayo
  • 1 1/2 Tbsp Dijon Mustard 
  • 4 Green Onions, minced
  • White Pepper, to taste
  • Salt, to taste
  • 1 Avocado, sliced thin and chopped into very teeny pieces
  • 6 slices Bacon, cooked and crumbled

Instructions: 
  1. Place eggs in large pot and cover with cold water. Bring to a boil and boil for 30 minutes. Give eggs a cold water bath and let them sit and cool. 
  2. Carefully crack each egg all over on the counter and without removing the shell, replace in cold water bath (this allows a little water to get under the shell and will make peeling them a million times easier). By the time you’ve got all of them cracked, you can start peeling the first ones. Carefully remove the shell and any of the slimy skin stuff. Rinse any leftover shell pieces off with cold water.
  3. Slice each egg in half lengthwise with a non-serrated knife. Carefully shake or scoop out the yolk and place the shell on a plate (or in one of those fancy Deviled Egg plates if you have one). 
  4. Add mayo, mustard, and minced onions to egg yolks and mash with a fork, stirring until relatively smooth. Add salt and white pepper. Give it a good taste test and adjust any quantities as necessary.
  5. Spoon the egg mixture into a ziploc bag, snip off the corner and smoosh the eggs yolks back into their shells.
  6.  Carefully push a couple bits of avocado and a pinch of bacon bits on the top of each egg.  Voila!

Thanksgiving Wine Pairing

Thanksgiving is a time to join with family and celebrate with a large feast.  Many of you may have already started preparing the turkey and baking the pies.  Now comes the real question, what type of wine are you going to serve with your Thanksgiving meal?  Seven Springs Winery is here to help, with the perfect Thanksgiving wine pairings!

Turkey and Stuffing


Red wine is the traditional go-to wine for Thanksgiving dinner and our Seven's Red Heaven is the perfect selection!  The refreshing, crisp fruit flavors pair well with the traditional flavors of turkey and stuffing.

Mashed Potatoes


Syrah also pairs well with the herb-infused stuffing and the dark turkey meat, but best of all it compliments the savory taste of the mashed potatoes.  It brings a spicy edge to the table, increasing the complexity, while graciously handling the cornucopia of traditional Thanksgiving flavors.

Green Bean Casserole


The tropical fruit flavors in our light bodied Muscato Sparkling pair well with green beans and squash. Sparkling wines are the perfect go-to wine because of their high acidity and underlying fruit flavors that help cleanse your palate.

Cranberry Sauce


If you're looking for a white wine, our Chardonel is a great choice!  The fruity with toasted oak flavor makes it an excellent companion for cranberry sauce and white turkey meat.

Pumpkin Pie 


For dessert, we suggest either our Vignoles or Spring Fling white wines.  Their fruity, citrus flavors help bolster the pumpkin pie taste.

In the end it all comes down to your preference and that of your guests.  Keep it simple and have at least one red and one white on hand so that your guests can find something they prefer.  Try to avoid super-dry wines, as they can die in the presence of all that fruit, sugar and salt.  Whether you prefer white or red, a Missouri wine with some fruity flavors is the best option for pairing with Thanksgiving dinner. Check out all the Wine Trials Missouri has to Offer!

The Show Me State offers delicious, quality wines, charming landscapes, beautiful hills and valleys with some friendly Midwestern hospitality. Missouri is now the eighth-largest wine producing state, with nine wine trails, 393 vineyards and more than 1,600 acres of wine grapes. Although we believe the Lake of the Ozarks is home to the best wineries in Missouri, we wanted to share with you these Missouri Wine Trails.  Each and every one of Missouri's nine wine trails offers visitors the experience of a lifetime!

Augusta Wine Country Trail


When traveling on scenic highway 94 between Defiance and Augusta, you will find nine family-owned wineries. This region is the first designated American Viticultural Area in the United States. Great Northwest Wine Trail

Vignoles Wine at Seven Springs Winery

Wine, Wine and more Wine!  


Last week, we discussed all of the delicious wines available at Seven Springs Winery. Today we are going to start a series of featured wines so you can learn more about each one of the wines you can taste at your Lake of the Ozarks Winery.  To start off we are going to feature one of Missouri's most versatile wines, the Vignoles.

About Vignoles Wine


Vignoles grapes are used to produce wines ranging in flavor from refreshingly dry to blissfully sweet. At Seven Springs Winery you can taste the Dry Vignoles or the semi-sweet Vignoles wine.  Similar to a German Riesling, the Vignoles possess a luscious floral aroma and fruity flavors of citrus, pineapple and apricot.  Vignoles are the second most common grape grown in the state of Missouri.  This white wine serves as a great stand alone wine for sipping on a hot summers night or paired with a wide variety of food choices.  The Vignoles wine is a match for any pallet.  Wine lovers who prefer a sweet wine will fawn over the fruity flavors, while those that prefer a dry wine will likely find it light and refreshing.

Dry Vignoles
Aroma of Tangerine and oranges. Crisp vibrant acidity precedes a long and refreshing finish.

Chardonet
Light to medium straw color. Medium body, fruity with toasted oak.

Traminette
Light straw with green hues. Light bodied, with a fruity yet off dry finish.

Vignoles
Mid straw color with olive green tone. Flavorful bodied, peach, melon & citrus

Spring Fling
Light straw color with a lime green rim. Light bodied with fruity, citrus & lychee.

Muscato Sparkling
Brilliant, light straw, tropical fruit & flowers. Light bodied, fruit forward sparkling finish.

Blushing Springs

Beautiful deep plum color with refreshing, crisp fruit flavors & a distinct sweet finish.

A 2001 Vintage Norton blended with a 2008 fortified Norton.
