Cold Wine Concoctions

While the kids are going back to school and it feels like summer is drawing to a close - it's not over yet! The weather is still beautiful, the grass is still green, and you still need a glass of wine to get you through the rest of the week! At Seven Springs Winery, we still have plenty of events at the Lake of the Ozarks scheduled, as well as enough chilled wine to keep you going for a while. Before the sun sets on your summer vacation, here are a few fun recipes you should try with your favorite wine!

White Strawberry-Lemon Sangria

Recipe Credit: www.KitchenTreaty.com

Strawberries, lemon, apples, white wine, and rum make a perfect summer sangria that'll knock your socks off.

INGREDIENTS:2 lemons, thinly sliced
1 apple, cored and sliced (any kind)
1 cup strawberries, hulled and sliced lengthwise
1 (750 ml) bottle Seve Springs Winery's white wine (like Chardonel)
1/2 cup light rum
4 cups lemon-lime soda

DIRECTIONS:Add lemon slices to a large pitcher, then the apples and strawberries.
Pour the wine and rum over the top.
Cover and place in the refrigerator for 4 - 5 hours.
Remove from refrigerator and add the lemon lime soda. Add a few pieces of the fruit to your glass and pour sangria over to serve.
Leftovers keep for a day or so, but you likely won't have any!

Red Wine Ice Cream

INGREDIENTS1 bottle of Seven Spring's red wine (like Spring Red)
2/3 cup brown sugar
2 cups heavy whipping cream
1 cup half & half
4 egg yolks
1 vanilla bean

DIRECTIONSThe first step in making our wine ice cream is to reduce the wine down to a syrupy liquid. Pour your bottle of red wine into a large pot and simmer over low-medium heat until it is reduced to one cup of liquid. This took about an hour for me, but it could be sooner, so you should keep an eye on yours. Once it has been reduced, set aside. In a medium pot, whisk together the brown sugar, and whipping cream. Cut your vanilla bean in half and scrape out that beautiful vanilla caviar into the pot. Add the bean pod to the pot as well. Stir constantly while cooking over medium heat until it begins to steam, but before it boils. Beat your egg yolks with a fork or with a mixer until they are light colored. Remove the vanilla bean pod from the cream and slowly add the cream into the egg yolks. It is important to add the cream to the eggs very slowly so that they do not curdle. Once you have successfully added the cream to the eggs, pour the mixture back into the pot and cook over medium heat until it thickens and turns into a custard. If it sticks to the back of a wooden spoon, it is done. Remove from it from heat. Pour the mixture through a strainer and into a large bowl. Stir in the half and half and the reduced wine. Chill the mixture in the fridge for an hour or two until cold. Add to your ice cream maker and freeze according to directions. (For me this is about 30 minutes). If it is too soft for your liking, stick in the freezer for a few more hours. Then sit back and serve yourself a glass of Red Wine Ice Cream alongside a glass of red wine!

Recipe Credit: www.DessertForTwo.com

INGREDIENTS
2 cups cold fruity white wine (like our Spring Fling)
2-3 medium peaches, blanched, peeled, frozen, and sliced (or half a bag of frozen peaches)
sliced peaches for serving, optional

DIRECTIONS
In a blender, combine the wine and peaches. Puree until smooth.
If the mixture is too warm and liquefied, place it in the freezer and stir every 30 minutes until a perfect slushy texture forms.
You can make these in advance and defrost for 15 minutes at room temperature before serving. You can also double the recipe and use the entire bottle of wine to serve 4. The cups in the photo above hold about 1 cup of slushy.

Why Your Wine Bottle Is Shaped The Way It Is

Have you ever noticed that your wine bottle can come in a variety of shapes, sizes, heights and widths? While you might assume that the shape is related to some scientific fact that impacts the flavor of the wine - it actually isn't! The shape actually reflects history and tradition, and even where the wine was made! Here are a few interesting things to know about the shape of your wine bottle before coming out to drink the best wine at the Lake of the Ozarks!

Wine Bottle Shapes

There are hundreds of different bottle shapes but most winemakers will choose to go with one of these three: the Bordeaux bottle, the Burgundy bottle, and the Alsace/Mosel Bottle. Here are some interesting facts about how they came to be.

The Burgundy Bottle

Some say this bottle is shaped the way it is because it was easier for winemakers to make, other say that it captured the tannins better - either way, it's a very popular style. Like it's name implies, it was designed specifically for red and white Burgundies, as well as chardonnay and pinot noir. It was invented sometime in the nineteenth century, but it is still just as popular as it was then. In fact, you'll probably find a good red or white wine in this bottle.

The Bordeaux Bottle

After the creation of the burgundy bottle, the Bordeaux bottle began to pick up in popularity as well. You would commonly find cabernet sauvignon and merlot in a bottle like this bottle, and it immediately became the most used among winemakers around the world. The most distinctive feature of the Bordeaux bottle is the distinctive "shoulders" on the bottle. Many believe that the shoulders were created in order to catch the sediment that often accumulated in old Bordeaux  while the bottle was being decanted. Of course, this may not really be the case. It could have been merely a design choice to set the bottle apart from the others.

The Alsatian/Mosel Bottle

This third type of wine bottle was created shortly after the Bordeaux. It was made to store Riesling, both dry and sweet. You will now see it holding Gewurztraminer. These bottles are much more delicate than Burgundy and Bordeaux bottles, and many think that it could have been because of the transportation route for these wines was the Rhine river, which meant that you needed smaller river ships - hence a smaller more slender bottle. The transportation on the river may have also been more calm than the high seas, meaning a delicate bottle was acceptable.

Drink the Best Wine at the Lake of the Ozarks

Are you trying to remember the shape of a Seven Springs wine bottle? Well, it's definitely one of these three! You should come out to our beautiful Lake of the Ozarks winery to find out. Our winery sits nestled in the Ozark hills, and it makes the perfect place to come unwind after a busy day at the office or even a busy week in general. Our patio overlooks peaceful landscapes, and our wine is always kept cold and ready for you. Come out and see us (and our wine bottles!) tonight.

You can take advantage of our Bachelorette Package at Seven Springs Winery that also includes fun times at Tan-Tar-A and the Blue Room! If the bride enjoys a low key and laid back event where you can all sit around snacking on delicious food and sipping the best Missouri Wine, she will LOVE spending a day at our winery at the Lake of the Ozarks! 5 Accessories for the Wine Connoisseur...or Beginner!

Oenophile, wino, connoisseur, aficianado, sommelier...the list goes on! There are many names for wine lovers, wine collectors, and wine fans. You don't have to be a wine fanatic to have good wine accessories though. Behind some high prices and posh products, you'll find that the brand doesn't matter nearly as much at the practicality! Here are a few things you should have on hand if you drink wine.

Wine Opener

We think that even Houdini would agree that it's hard to break into a wine bottle without corkscrews...These fancy tools come in many shapes, sizes and styles, ranging from beginner to seemingly complicated. The goal, though, is to get your wine open! We have an easy to use corkscrew in our shop, it also sports our lovely logo, so you can always be reminded of your favorite winery at the Lake of the Ozarks when you open your wine!

Wine Glasses

In desperate situations we suppose a tumbler would work, but to truly enjoy wine you need wine glasses. Recent studies have even proven that the shape of a glass affects how the flavor of the wine is perceived. You have many different choices when it comes to glasses, stemmed vs. stemless, and crystal vs. glass. Some experts argue that stemless wine glasses cause unsightly finger prints, and too much heat transfer - though the downsides are pretty minimal. As for the differences between crystal and glass, crystal wins because it can be spun to have a strong, yet thin rim.

Decanter

This may seem rather fancy for someone who just casually enjoys a glass of wine, but exposing wine to oxygen before you drink it can help smooth out harsh tannins and bitterness. It can also release beautiful aromas! Wine can aerate slightly as your pour it from the bottle to your glass, but this tool increases the rate at which oxygen brings out the wine's best characteristics. Most aerating and decanting is reserved for red wines, but you can perform this technique on white and rosés as well.

Wine Stopper

After the cork is popped, wine is extremely vulnerable to oxidation. Oxidation is excessive exposure to oxygen, which is wine's unique form of kryptonite. Keeping oxygen away from the wine is the only way to prolong how long the wine will last. We have some unique stoppers in our shop that will not only preserve your wine, and make your wine bottle look beautiful at the same time!

Tasting Notebook

After one...or a dozen glasses of wine, your memory of the flavor won't be the same. As simple as it seems to have a tasting notebook, it's actually a very important tool if you're interested in becoming a wine connoisseur, or even just a wine lover. Certain flavors will pop out, and when you write them down you will have a better memory of them! You can keep an actual notebook, or just take notes in your phone, it's important to keep these notes in the same spot where you can always come back to them.

Whether you are a wine expert, a beginner, or a wine lover - having good tools will make your wine experience all the more fun! Plus you can impress your friends at your next dinner party with all of your fancy wine gear. If you're still building your wine collection, we have the best wine at the Lake of the Ozarks and we'd love to help build your accessories collection AND your wine collection! Our venue is peacefully nestled in the Ozarks of Missouri, and we have a wonderful facility for you to sit back and enjoy the view, and the wine! Stop in this weekend for a tasting, a bottle and a deliciously good time!
