Wine & Wedding Cake - An Amazing Pair!

Wine and wedding cake go hand in hand when you'll be celebrating your big day! Of course, pairing your wine and wedding cake can feel like a science. While many bakeries encourage you to taste your cake ahead of time, we think you should have a cake and wine pairing session, too ... just to make sure they work well together! Here are a few ideas to get you started on pairing your Missouri wine and your wedding cake.

Chocolate Cake

The rich and decadent flavors of chocolate cake make it a popular choice for weddings. No matter what type of chocolate you are choosing, you can count on our Norton to complete the perfect pair. The opaque, deep plum color will look magnificent with the rich chocolate, and the tobacco and oak flavors, along with the full bodied, spicy smooth persistent finish will be magnificent.

Fruit Flavors

From strawberry to lemon, fresh and fruity flavors can be a dream for your summer wedding. You'll want to pair a wine that is just as fresh and fun as your cake, so we recommend trying the Moscato Sparkling. The brilliant, light straw color will mimic the freshness of your light cake. The tropical fruit and flower flavors with the light bodied, fruit forward sparkling finish will pair nicely with your fresh, fruit flavored cake. Not to mention, the sparkling aspect of this wine will be a fun way to celebrate your wedding!

White Cake

This classic cake is a natural choice for many brides. It complements the clean and white style you've tried to achieve through your wedding. It's uncomplicated, delicious, and classic. You want to pair a wine that has the same characteristics but also brings out the flavor as well. We recommend pairing our Chardonel white wine with your white cake. The light to medium straw color will complement your cake, and the medium body and fruity, toasted oak flavor will enhance the vanilla flavors in your cake and frosting.

Red Velvet Cake

When you're looking for the perfect pair for your rich, velvety, red velvet cake - you need a velvety wine! Try pairing our Spring Red with your red velvet wedding cake. The semi-sweet finish will pair wonderfully with the rich texture of the red velvet cake, and the hint of black cherry with the rich chocolate flavors will be divine. This wine ends with a velvet finish - perfect for this type of cake.

Spicy Cake

From spice cake to carrot cake, there are many delicious cakes out there that have a bit of spice. If you're looking for a wine that will pair wonderfully with these types of cake - we would like to suggest our Vignoles variety. The mild straw color pairs well with these cakes because while they can be rich, they aren't quite ready for a red wine. This flavorful bodied wine with peach, melon, and citrus helps to bring out the spicy flavor of either cake, and the fruity tones highlight the carrot in carrot cake.

The wine you choose for your wedding is just as important as the meal and the cake. They work together simultaneously, and we would love to help you make the choice. At Seven Springs Winery, we are not only the best winery at the Lake of the Ozarks, but we host the best wedding venue at the Lake of the Ozarks. Choosing a Wine For Your Thanksgiving Feast

The time of year has come where we pull out our stretchy pants, spend time with friends and family, and toast to all of the things we're thankful for. Obviously, we're thankful for good wine, and lots of it! As you're finalizing your Thanksgiving menu don't forget to give some thought to the type of wine you'll be serving. At Seven Springs Winery, we provide you with amazing Missouri wine, so when you're looking for the perfect vino, we can help.

Turkey is a perfect match for wine because it's light enough to pair with white, but flavorful enough to enjoy with a light red - and of course the dark meat is delectable with a dark red. It can be challenging, however, to find the perfect wine for your Thanksgiving dinner because of the smorgas board of foods you may be enjoying. Here are a few ways you can narrow it down and select the best wine for your Thanksgiving meal!

Add Some Sparkle

You can't go wrong with a sparkling wine for your Thanksgiving dinner! It pairs well with turkey and cranberry sauce, and there's just something festive about a chilled, sparkling beverage. At Seven Springs Winery we have two crisp, sparkling wines that would pair wonderful with your feast.

Muscato Sparkling
Brilliant, light straw, tropical fruit & flowers. Light bodied, fruit forward sparkling finish.

Blushing Springs
Sparkling red wine, sweet berry aromas with a semi sweet finish.

Change It Up

You could use the same wine throughout the entire meal, OR, you could serve a different wine with every course. This is obviously a good option, because you don't have to choose just one wine, and you can sample several different ones! Don't know where to start? Our wine menu on our website lists all of our wines, with short descriptions of each one. You can get a good idea of what would taste best with which part of your meal and wow your guests with your variety!

Guests Choice

What do you do if your mom likes bold reds, your uncle likes white, and your sister only drinks sweet? Buy ALL the wine! You think we're kidding? One of the best ways to make sure everyone has what they want at dinner is by providing the wine that your guests like, and letting them pair it with their meal. This is an easy way to pair wine, and certainly the most successful.

End With Dessert

Obviously you'll end your meal with dessert, but why don't you choose a dessert wine to seal the deal. A fresh, sweet wine is a great way to leave a perfect taste in your guests mouth as they finish savoring your impeccable meal. If you don't know where to start, we have two reds that would make a delectable combination with your desserts.

Spring Red
Semi sweet red with hint of black cherry and a velvet finish.

Seven’s Red Heaven
Beautiful deep plum color with refreshing, Crisp fruit flavors & a distinct sweet finish.

Be Thankful For Wine

While there are many things to be thankful for, like your family, friends, good food, and a great place to celebrate - we think good wine should make the list! Come out to the winery, grab several bottles of the best wine at the Lake of the Ozarks and celebrate! All of the staff at Seven Springs Winery hope you have a wonderful Thanksgiving, and we'll see you when you get back!

Pop the Cork and See Why It's So Important

There is only one thing standing between you enjoying your glass of wine - the cork. This little contraption that seals your wine into the bottle is vitally important for more reasons than just sealing up the bottle. Do you know the history of this little piece of tree? Or how it all started? Today, we're going to address some of these important questions and maybe help you to appreciate these little pieces of cork and how they impact your favorite wine at the Lake of the Ozarks!

The History of Sealing Wine

While corks have been used for as long as we can remember, they haven't always been made out of the cork material. In ancient times, it was common to seal up the wine with a  coating of pitch or gypsum over the opening of a vessel, or a film of olive oil floating on the surface of the wine. During the medieval times, they completely gave up on corks and used twists of cloth or leather to stop the jug or bottle. Sometimes sealing wax was also involved in getting the tops closed off from germs.

At the end of the 16th century, we start to see corks making a come back because of a phrase from Shakespeare's "As You Like It." The glass stoppers started to become very popular around 1676 but were finally abandoned around 1825 because it was hard to get them out without breaking the bottle (what a waste of wine that would be!)

What is the Purpose of Using a Cork

Finally, it was realized that cork was a much better product for sealing wine, not only because it kept oxygen out of the bottle when being transported, but also in storage. Here are a few other reasons that cork has remained to be one of the best ways to seal wine.
  • Because cork is a light material, it doesn't add much weight to the overall bottle.
  • Cork is also VERY resistant to moisture penetration.
  • Did you know that when corks are removed from being compressed in the bottle, they will recover about 85% of its initial volume immediately and more than 98% after 24 hours?
  • Because the cells in a cork stopper produce a cupping effect, million of cells are opened and function as suction cups in the bottle. This creates a great power for adhesion to wet smooth surface!
  • Corks can retain their properties at both high and low extremes of temperature and usually last for 20 years without deteriorating!
  • Cork is also one of the only materials know that can compensate for small imperfections in glass.
  • Cork is biodegradable.
It just gets better and better! There are so many reasons that cork is the perfect fit for wine bottles. Not to mention, there are some really fun crafts that can be done from used corks.

If you want to pop a cork and make a toast to a little, but very important part of the winemaking process, we will join you! We love anything that helps us preserve the best Missouri Wine - and corks do just that. Are you ready to indulge in a fabulous glass of vino? Come out to our winery and see for yourself how pleasing to the pallet that it is!

Try These Easter Recipes (with Suggested Wine Pairings)

Easter is a time to gather with family and friends to enjoy a special meal together. Just like the traditional turkey at Thanksgiving, there are certain dishes you will find at many Easter dinners. You will typically find either Ham or Lamb for the main dish. So what wine pairs best with these traditional Easter menu items? Keep reading for some new recipes to try and which of our Lake of the Ozarks wines to pair with each!

Glazed Easter Ham

Recipe From: www.thepioneerwoman.com

Wine Pairing: Seven Springs Chardonel

Ingredients:
  • 1 whole Fully Cooked Bone-in Ham (15-18 pounds)
  • Whole Cloves
  • 3 cups Brown Sugar
  • 1/2 cup Spicy Brown Mustard
  • 1 can Dr. Pepper or Coke
  • 3 Tbsp Apple Cider Vinegar

Instructions:
  1. Preheat oven to 325 F.
  2. Score the surface of the ham in a diamond pattern about 1/8-inch deep. Place cloves in the middle of each diamond. Place the ham in a large roasting pan with a rack, tent it with foil, and bake for 2 to 2/12 hours---or longer, depending on the package directions. (Some hams may require 3 to 3 1/2 hours at a lower temp; just check the package.)
  3. Heat the brown sugar, mustard, vinegar and soda in a small saucepan until bubbly. Cook until reduced and a bit thicker, about 15 minutes.
  4. After about 2 hours of baking time, remove the foil and brush the glaze on the ham in 20 minutes intervals (put the ham back in the oven, uncovered, in between) until it's nice and glossy. Remove from the oven and allow to rest 15-20 minutes before carving.

Garlic and Herb Lamb

Recipe From: www.allrecipes.com

Wine Pairing: Seven Springs Syrah

Ingredients:
  • 1 (5 lb) Leg of Lamb
  • 3 cloves Garlic, cut into slivers
  • 3 tsp Dried Dill Weed
  • 1 1/2 tsp Salt
  • 1 tsp Dried Rosemary, crushed
  • 1/2 tsp Ground Black Pepper

Instructions:
  1. Preheat the oven to 325 degrees F (165 degrees C).
  2. Puncture the leg of lamb with the tip of a knife just far enough to insert slivers of garlic into the holes. Mix together the dill, salt and rosemary, and rub over the leg of lamb. Place the lamb, fatty side up, on a rack in a shallow roasting pan.
  3. Roast uncovered for 2 to 2 1/2 hours in the preheated oven, to an internal temperature of 155 degrees F (68 degrees C) for medium. Tent with aluminum foil and let stand for 15 to 20 minutes before carving. The lamb will continue to cook a little bit, and the juices will set up better for carving.

Bacon Avocado Deviled Eggs

Recipe From: www.heidikinscooks.com

Wine Pairing: Seven Springs Muscato Sparkling

Ingredients:
  • 12 Eggs
  • 1/2 cup Mayo
  • 1 1/2 Tbsp Dijon Mustard
  • 4 Green Onions, minced
  • White Pepper, to taste
  • Salt, to taste
  • 1 Avocado, sliced thin and chopped into very teeny pieces
  • 6 slices Bacon, cooked and crumbled

Instructions:
  1. Place eggs in large pot and cover with cold water. Bring to a boil and boil for 30 minutes. Give eggs a cold water bath and let them sit and cool.
  2. Carefully crack each egg all over on the counter and without removing the shell, replace in cold water bath (this allows a little water to get under the shell and will make peeling them a million times easier). By the time you’ve got all of them cracked, you can start peeling the first ones. Carefully remove the shell and any of the slimy skin stuff. Rinse any leftover shell pieces off with cold water.
  3. Slice each egg in half lengthwise with a non-serrated knife. Carefully shake or scoop out the yolk and place the shell on a plate (or in one of those fancy Deviled Egg plates if you have one).
  4. Add mayo, mustard, and minced onions to egg yolks and mash with a fork, stirring until relatively smooth. Add salt and white pepper. Give it a good taste test and adjust any quantities as necessary.
  5. Spoon the egg mixture into a ziploc bag, snip off the corner and smoosh the eggs yolks back into their shells.
  6.  Carefully push a couple bits of avocado and a pinch of bacon bits on the top of each egg.  Voila!
Seven Springs Winery hopes you have a wonderful Easter dinner! Be sure to stop by our Lake of the Ozarks winery and pick up a bottle of wine to go with your meal this weekend. Your family and friends will not be disappointed. See you soon!

7 Interesting Wine Facts You May Not Know

Although wine originated long ago, it keeps gaining popularity all around the world.  Today we have thousands of wines that can be found all over the world including right here in Missouri.  As you're drinking your favorite Lake of the Ozarks wine, do you ever think about how wine became so widely loved or how certain traditions were started?  Here are some interesting facts about wine you may not know!

1. Cheers!

The custom bumping your glasses together and saying cheers came from old Rome where they used this method to ensure one one was trying to poison the others.  Bumping the glasses together made the drink spill from one cup to another.

2. No Wine for Women

In ancient Rome, it was forbidden for the women to drink wine.  If a husband found his wife dirnking wine, the law allowed for him to kill her.

3. Not for Egypt

Egypt was an ancient civilization that did not like wine.  The old kings avoided wine because they believed that the red alcoholic beverage was actually the blood of men who tried to fight the gods and failed. According to the Egyptians, this is what makes people act irrationally while drinking alchol.

4. Grape Juice Warning

During the prohibition period, grape juice concentrate manufacturers put a warning on their product due to the drinking lust Americans had.  The sticker read, "After you mix the concentrate with water, please do not keep the mix in a barrel for 20 days - as it will turn into wine."

5. Wine Sniffing Champion

In 2003, Richard Juhlin, a sport ed from Sweden, was crowned as the world champion of recognizing wine by smell.  He was able to recognize 43 wines out of 50.  In comparison, the second place winner was only able to recognize 4 of the wines.

6. Oops, We Made Wine

The earliest remnants of wine were discovered in Iran and the oldest evidence of cultivated vines were found in Georgia as early as 7000 B.C.  Supposedly, the drink orginally fermented by mistake when native yeasts accidentally came in contact with grapes stored in containers.  This turned the sugars in the grapes to alcohol.

7. Wine in Moderation

The ancient Greeks designed a wine glass that would ensure moderation when drinking wine.  If wine was poured above a certain level, the cup spilled its entire contents out of the bottom of the glass.

Seven Springs Winery is the perfect place to enjoy a glass of wine!  Don't worry, we don't have glasses that will spill your wine and women are allowed to drink here.  So grab your spouse or your friends and head on over to the best winery at the Lake of the Ozarks.  Located in the rolling Missouri foothills, Seven Springs Winery is an ideal place for relazing with a glass of your favorite wine and admiring the beautiful views!
