Boot Stomping Revival with Grayson Wood

Seven Springs Winery has been bringing you some of the best musicians at the Lake of the Ozarks all summer, and it's not even close to ending. We are honored to have a boot stomping event with Grayson Wood from Eldon, MO. His smooth tunes and smoky voice are sure to entice you to come ou and sit on the patio with a bottle of wine in your hand. Here are a few important details about the event that you won't want to miss.




Boot Stomping Revival with Grayson Wood

Join us for great music and a delicious BBQ buffet on Friday, July 29th from 6 PM to 9 PM. Grayson Wood will be entertaining us with his fantastic music, and we're looking forward to hearing him. The buffet is $15 per person, and the kitchen closes at 7 PM for regular menu items.

Pop the Cork and See Why It's So Important

There is only one thing standing between you enjoying your glass of wine - the cork. This little contraption that seals your wine into the bottle is vitally important for more reasons than just sealing up the bottle. Do you know the history of this little piece of tree? Or how it all started? Today, we're going to address some of these important questions and maybe help you to appreciate these little pieces of cork and how they impact your favorite wine at the Lake of the Ozarks!



The History of Sealing Wine

While corks have been used for as long as we can remember, they haven't always been made out of the cork material. In ancient times, it was common to seal up the wine with a  coating of pitch or gypsum over the opening of a vessel, or a film of olive oil floating on the surface of the wine. During the medieval times, they completely gave up on corks and used twists of cloth or leather to stop the jug or bottle. Sometimes sealing wax was also involved in getting the tops closed off from germs.

At the end of the 16th century, we start to see corks making a come back because of a phrase from Shakespeare's "As You Like It." The glass stoppers started to become very popular around 1676 but were finally abandoned around 1825 because it was hard to get them out without breaking the bottle (what a waste of wine that would be!)

What is the Purpose of Using a Cork

Finally, it was realized that cork was a much better product for sealing wine, not only because it kept oxygen out of the bottle when being transported, but also in storage. Here are a few other reasons that cork has remained to be one of the best ways to seal wine.
  • Because cork is a light material, it doesn't add much weight to the overall bottle.
  • Cork is also VERY resistant to moisture penetration.
  • Did you know that when corks are removed from being compressed in the bottle, they will recover about 85% of its initial volume immediately and more than 98% after 24 hours?
  • Because the cells in a cork stopper produce a cupping effect, million of cells are opened and function as suction cups in the bottle. This creates a great power for adhesion to wet smooth surface!
  • Corks can retain their properties at both high and low extremes of temperature and usually last for 20 years without deteriorating!
  • Cork is also one of the only materials know that can compensate for small imperfections in glass.
  • Cork is biodegradable.
It just gets better and better! There are so many reasons that cork is the perfect fit for wine bottles. Not to mention, there are some really fun crafts that can be done from used corks.

Crazy Customs Surrounding Wine

The act of drinking wine is, in all honesty, and emotional one. When you've had a long day at the office, you sit down with a glass of your favorite Missouri wine. If you are celebrating the nuptials of a dear friend or family member, you toast to their good health with a glass of wine. When you're happy, and partying with your girlfriends for a night on the town, it's not uncommon to pop a cork and drink to the occasion. Wine is often involved in emotional celebrations or laments, and this is proof from all of the crazy customs around the world that have to do with wine!


Wine In A Shoe?

In Ukraine, it's a common custom when you attend a wedding, to steal the shoe of the bride. Now, you do have to do this while she's sitting, and if you are successful, you earn the right to make some light-hearted demands from the guests. One of the most popular ones is that they have to drink wine from the bride's shoe. This doesn't sound like the most practical way to enjoy the true flavor of the wine, but thankfully they now strap a glass to the shoe and drink for that - normally.

Toast to Georgia

Now, this isn't the state, but the country. While it's not unusual to toast with wine, the individuals in Georgia take it to a whole new level. They take toasts very seriously, and if you ever find yourself out there and at authentic supra (feast), you shouldn't be surprised when you are expected to indulge in more than 20 toasts over the course of the evening.

Wine on the Rocks

Are you a connoisseur who is cringing at the thought? Well in Japan it's extremely trendy to drink yours with ice. Apparently is has a simple and brisk taste. We're not sure if it's true or not, but I think we'll just stick with chilled wine for now.

Coca-Cola Wine

As if you weren't cringing enough from imagining wine and ice together, now many Europeans are drinking their wine mixed with cola! It's becoming more and more popular, especially in France. Though, in Spain, they've created a concoction known as kalimotxo, which mixes cola and cheap red wine.

Wine War

Of course, when the Spaniards aren't mixing cola in their wine, they are throwing it on each other! The Haro Wine Festival in La Rioja, Spain basically has a town-wide wine fight on June 29th. They all dress in white clothes and then enjoy the whole night and next day filling water guns with wine and spraying each other down. It was started to celebrate the Feast of Saints Paul and Peter, but we know they really just wanted to have a wine war ;).

Fire, Ice, & Wine

In Portugal, they have a fun way of opening their wine bottles! They take a pair of tongs, heat them in a fire, and then clamp them around the neck of the bottle. Then the put the bottle in ice, and the sudden temperature change causes the bottle to cleanly break where the clamps are. This creates a mess free opening without any real disturbance of the wine!

Toast-Worthy Facts About Wine

While we do take wine very seriously at Seven Springs Winery, there are some REALLY fun and funny facts about this vino that we love so much. Whether you consider yourself a connoisseur or you are just getting started, we would love to invite you to come out to our winery at the Lake of the Ozarks to not only try our wines but take a few bottles home too! If you've always wondered where you can swim in wine or why people swirl their glass, we have some fun facts for you!




There is actually an organization that uses wine tastings to dig wells in Africa. They are called Wine to Water.

The world's oldest person attributed her amazing age of 122 to a diet of olive oil, port wine, and a kg of chocolate per week. Now that's our kind of woman!

Greeks took moderation very seriously, that's why they created a 'special' glass for wine. If the wine was poured above a certain level, the cup spilled the entire contents out of the bottom ... what a waste! We don't have those at Seven Springs Winery.

An experiment was performed to find out if wine drinkers paid more for wines with hard to pronounce names. It was true. It's also interesting to note that the participants who knew more about wine said that difficult-to-pronounce wines were worth more money. At Seven Springs Winery, you can pronounce our wines and still leave without spending more than you wanted!

Smelling the cork when it is first removed will give you a quick idea of a wine's quality.



If you visit a certain spa in Japan, you can swim in tea, coffee, and wine!

In Germany, it is legal to drink beer and wine at 14 with parental supervision, at 16 you can drink beer and wine without parental supervision, and at 18, you can drink any alcohol without parental supervision.

The scent of young wine is called an "aroma" while more mature wines provide a subtle "bouquet."

A wine tester will swirl their glass to encourage the wine to release all of its powerful aromas. Most of them will not fill their glass more than a third full in order to allow the aromas to collect and to not spill during a swirl.

Did you know there is actually a right and wrong way to hold your wine glass? If you hold it at the bowl of the glass your hand will heat it up and raise the temperature of the wine. If you hold is by the stem you shouldn't have the same issue. We won't judge how you hold your glass, though!

Portugal continues to be the world leader in cork production.
