Not only is Seven Springs Winery the Lake's original winery, but we also have a full menu of delicious appetizers, savory entrees, and light menu choices that will perfectly suit whatever your needs are. To make this even better, we also have chosen the perfect pairing for each item on the menu so you don't even have to think about what to drink. Don't know what menu items to choose? Seven Springs Nibblers

Spinach & Artichoke Dip
Artichokes and spinach with garlic, baked in a creamy white cheese sauce and served with herbed crostini. This is an incredibly savory choice, and it pairs wonderfully with our Traminette wine!

Traminette: Light straw with green hues. Light bodied, with a fruity yet off-dry finish.

Mediterranean Pizza
Spinach, artichokes, roasted red pepper, and ripe black olives topped with a blend of Italian herbs an cheese then baked on focaccia bread. This is the perfect choice for a relaxing evening on the patio - and even better when enjoyed with our Sangria Rojo!

Sangria Rojo: A light, refreshing blend of sprite, orange juice, and Dry Rougeon wine.

Savory Oils Dipping Tree
Three infused oils with parmesan served with fresh bread for dipping. This is wonderful light fare, great when enjoyed after a busy day and you just need to relax. Pair it with Seven's Red Heaven for the best experience.

Seven's Red Heaven: Beautiful deep plum color with refreshing, Crisp fruit flavors & a distinct sweet finish.

Greman Pretzel Bread
Bavarian style pretzel bread sprinkled with sea salt and served with spicy mustard. Pair this with our Dry Vignoles for a perfect pair.

Dry Vignoles: Aromas of Tangerine and oranges. Crisp vibrant acidity precedes a long and refreshing finish.



Light Fare

Florida Style Crab Cakes
Real housemade crab cakes, sauteed in olive oil, topped with a creamy seafood sauce. Served over field greens and topped with walnut nuggets. Pair this savory dish with our Syrah wine!

Syrah: Aromas of currant, blackberry, black pepper with a subtle vanilla oak finish.
Seared Ahi Tuna
Black sesame and red pepper crusted Ahi tuna, seared rare and served on a bed of mixed field greens with wasabi cream and soy sauce. This is the perfect dish for anyone coming to the Lake, as it has the feel true lake life. Pair it with our Muscato Sparkling and watch this meal light up!

Muscato Sparkling: Brilliant, light straw, tropical fruit & flowers. Light bodied, fruit forward sparkling finish.

Boursin Stuffed Mushrooms
Jumbo mushroom caps, stuffed with garlic-herb Boursin cheese. Topped with mozzarella and baked. Served with pasta salad, and made even better when paired with our Vignoles wine.

Vignoles: Mid straw color with olive green tone. Flavorful bodied, peach, melon & citrus.
Award Winner Best of the Lake: Spicy Shrimp & Crab Bisque
Wild bay shrimp, lump crab, herbs and cayenne in a rich cream sauce - yum! Enjoy it with our Muscato Sparkling.

Muscato Sparkling: Brilliant, light straw, tropical fruit & flowers. Light bodied, fruit forward sparkling finish.

🍷ValenWINE & Chocolate Pairings💝

Valentine's Day is right around the corner, and if you haven't gotten something special for the Valentine in your life, you still have time! One of the most popular choices, is obviously chocolate, but what about pairing up some of the favorite chocolate with impeccable wine? At Seven Springs Winery, not only do we have the scoop on the best wine pairings for that box of chocolate, but we also have some information for the best Valentine's Date at the Lake of the Ozarks - so stay tuned!


Pair by Color

When choosing the best Lake of the Ozarks wine to pair with your chocolate, you want to pair by color. White chocolate and white wine always go well together, while the heavy reds go well with bittersweet chocolates. The reason behind this is that the dark chocolates and deep coloured wine have a higher tannin content than their lighter counterparts - and they pair deliciously together.

Pair By Sweetness

Another consideration when pairing your wine and chocolate is to pair based off of sweetness. You'll want to pair your most sweet white wines with your white chocolates and your bittersweet chocolates with your least sweet wines.

A good rule of thumb is to make sure that your wine is always slightly sweeter than your chocolate.


A Few Suggestions

Need a few ideas? Here are some chocolate pairings that will go well with our Lake of the Ozarks wine:

Chocolate: Praline
Wine: Chardonel

From the medium body flavors with the fruity and toasted oak undertones make for a perfect pairing with a praline chocolate. They can have equal sweetness, and if it's a lighter chocolate, you'll find that the wine pairs nicely.

Chocolate: Caramel
Wine: Syrah

Caramel chocolate goes divinely with our Syrah wine. The currant and blackberry flavors will complement it well, while the black pepper and subtle vanilla oak finish is extraordinary with a caramel chocolate. Many caramel chocolates boast of a mid to dark chocolate coating, and our red syrah is a perfect pair.

Chocolate: Berries
Wine: Blushing Springs

When indulging in a berry chocolate, you want something that will be equally sweet and flavorful. This sparkling red wine has sweet berry aromas and a semi-sweet finish. From raspberry to pomegranate, we think this will be a special pair for your next berry chocolate.

Chocolate: Citrus
Wine: Vignoles

Citrus flavored chocolates have both a unique flavor profile, along with a varied sweetness. We think that our Vignoles wine would be a perfect pair, from the mid-straw color and olive green tone to the flavorful body with peach, melon, and citrus.



Valentine's Day at the Lake of the Ozarks

While chocolate and wine are great, you may want to do a little more for the love of your life on February 14th. This romantic dinner will be on February 14th, and reservations can be made from 5 to 8 PM depending on reservations that are available. It's going to be a fantastic three course dinner featuring Caesar salad, 10 oz K.C. Strip and Lobster Tail with garlic mashed potatoes and asparagus, and turtle cheesecake to finish out the evening. Pairing Your Food & Wine 101

If you want to host a delicious meal, while also appearing to be an expert wine connoisseur, learning about food and wine pairing is a must. While there’s a bit of a science to it, the best thing about it is that as long as YOU like the pairing, you’re right. Differences in taste buds could mean that ideal pairing could be a little different, however, there are still a few things that can help you make a no-fail choice when it comes to wine and food pairing. Here are a few suggestions to make you look like an expert.


Sparkling Wines

When serving a sparkling wine, there are a few things to keep in mind. You want to try and pair it with light and/or salty menu options. All the while avoiding red meat, spicy dishes, and cream sauces. Some good pairing suggestions would be halibut, eggs, or oysters, and a good cheese suggestion is gruyere.

Try these varieties from Seven Springs:

Rich White Wines

These types of wines have a very distinct flavor profile and can be paired with some delicious dishes. They will go great with fatty or creamy dishes, but you’ll want to avoid smoked meats, Asian dishes or tomatoes. A few suggestions for serving would be with a creamy sauce, buttery fish, or a pasta salad. If you are pairing it with a cheese tray, camembert is a great choice!

Dry White Wines

If dry whites are your style, you’re in luck! There are some great menu options that pair well with this type of wine. You’ll want to opt for light and/or tangy choices while staying away from red meat or blue cheese. A few delicious choices would be white meat, salad, or mushrooms. For a cheese pairing, you could enjoy gouda with your dry white!

Sweet White Wines

If you want to pair sweet white with your next meal, you should consider serving spicy and/or sweet choices! You’ll want to avoid foods that are sweeter than your wine and dark chocolate. A few scrumptious choices would be spicy food, curries, or fruity desserts - and if you’re pairing cheese, brie is a fantastic choice!

Light Red Wines

Light red wines go wonderfully with earthy and/or woody menu choices but don’t pair so well with BBQ sauce, smoked foods or salty foods. Because you’re serving a light red, you can opt for white meat, cured meat, or truffles. When pairing cheese, Swiss goes wonderfully!

Medium Red Wines

Rich and/or savory meals are perfection when you want to serve a medium red wine. However, you’ll want to avoid spicy foods, raw fish, or oysters. Red meat, braised dishes, or potatoes pair incredibly well with this wine, and when serving cheese, choose a flavorful gorgonzola!

Bold Red

There’s nothing better than a bold red to set the tone for your meal. With any bold flavors, though, you’ll want to pair them strategically. Pair it with other bold and or/fatty choices, but avoid seafood, egg dishes, and light salads. It can pair well with stew, lamb or pate, and a nice smoked cheddar is perfection.

4 Reasons To Visit the Winery

Once the holidays are over, it’s time to start the long, arduous task of making it through the winter. The days are short and cold, and while we would REALLY love for summer to just come back so we can sit on the patio with a glass of wine, it looks like Old Man Winter is here to stay for a bit. This month, we have Mitch Shields gracing our stage, and he’s going to be bringing an amazing time. Mitch recently won in three categories of Missouri’s Best for 2017: Best Male Vocalist, Best Musician, and Best Local Band. The BEST part is that he loves to take requests, so get your list ready and plan to dance the night away with Mitch Shields. He will be performing live at our winery on Saturday, January 13th and 27th from 1 pm to 5 pm.

It's Beginning to Taste a Lot Like Christmas🎄🍷🍪

'Tis the season to be jolly because the Christmas cookies are coming out and we want some cookie with our wine! At Seven Springs Winery, we've been in the Christmas spirit with all of the fun holiday parties and events, but now it's time to enjoy a Silent Night and enjoy some of these delicious Christmas cookie and wine pairings - because, let's face it, that's really what Santa is going to want on Christmas Eve ...



Christmas Cookie and Wine Pairings
There's nothing better than indulging in your favorite Christmas cookie around the holidays - and when you add your favorite wine, it's the perfect pair. Check out these delicious cookie pairing ideas with your favorite Lake of the Ozarks wine.

Butter Cookies & Chardonel
The buttery cookie that is so well known with the Christmas season will pair wonderfully with our chardonel. The rustic toasted oak flavors in our wine will pair well with this sweet and buttery cookie.

Chocolate Chip Cookies & Seven's Red Heaven
Chocolate chip cookies taste a bit like heaven, so we're thinking you should pair our Seven's Red Heaven with America's favorite cookie. The chocolate pairs well with the deep and crisp flavors in our red wine.

Fudge Crinkles & Spring Red
A rich cookie needs the perfect wine to pair with it and give the perfect boost and blend. Our Spring Red is semi-sweet, which complements the richness without overpowering it - and the velvet finish is divine.

Gingerbread Cookies & Spring Fling

Enjoy Wine & Cheese Day with These Pairings 🍷🧀

Wine and cheese may be one of the most popular pairings in the food world. They both age well, they both pair well, and they are the perfect combination when you’re looking for something sophisticated. Whether you’re having a Missouri wine and cheese tasting party and you’re looking for the perfect pairings, or you just want to have a private event and need to know what goes well with which - we can help with everything! Here is a quick guide to cheese and wine pairing to get you started, don’t forget to come out to the best winery at the Lake of the Ozarks to get your wine stock!


Pair Equally

If you have an intense cheese, you’ll want to pair it with an equally intense wine - don’t worry, they can handle it. Of course, the same applies if you have a delicate cheese. The flavors would be masked if you pair a bold wine with a delicate cheese. This is a key theory when learning how to pair your own wine and cheese varieties. As a general rule, if it is a wine over 14.5% ABV, it’s considered an intense wine and pairs best with an intense cheese. While wines under 12% ABV are considered less intense and they work wonderfully with a delicate cheese.

Spring Red & Gruyére, Comté, and Nutty Cow Cheeses
Syrah & Cheddar, Gouda, and Aged Cow Cheese

Think Bold and Aged

Bold wines and aged cheese tend to pair wonderfully together. The reason is that as cheese is aged, it looses its water content and the fat content increases. More fat means it will pair with an even bolder red wine. The high-fat pairs well with the high tannins. Here are a few wine suggestions to pair with your aged cheese.

Norton & Parmigiano - Reggiano, Asiago, and Provolone
Syrah & Grana Padano, Pecorino, and Asiago

Funky & Sweet

Do you like cheese with a funky flavor? Pair them with a sweet wine! Why? The sweetness of the wine will help balance the potency in the cheese and make it taste creamier. The “funk” of the cheese will also help balance the sweet taste of the wine. Here are some suggestions for funk cheese and sweet wine pairings!

Chardonel & Taleggio, Soft Washed-Rind Cheese
Vignole or Norton Port & Stilton, Blue-Vein Cheese, and Soft Bloomy Rind Cheese

When in Doubt …

If you aren’t sure what to get, you can’t go wrong with a firm, nutty cheese. The fat content with counterbalance the tannin in red wine, but enough delicacy to pair with white wines.

Wine pairing may seem like a complicated art where you have to perform all sorts of fancy wine rituals. First, you have to smell the wine, then swish the wine, and finally roll it around your mouth until it's completely coated while following it up with a bit of the most delicate chocolate. You can actually enjoy any type of wine pairing, and you don't have to include any specific form of enjoyment (though you can if you want to!). Wine pairing is simply about finding two flavors that go together in your mouth like peanut butter and chocolate. You can try any of our wine pairings, or you can make some up on your own. Embracing Fall Flavors with Your Favorite Wine

The fall season is finally upon us, and one of the greatest parts about it is the flavors. Of course, when you pair those flavors with wine, it's even better! From hearty soups and stews to cozy desserts like pumpkin pie and apple crisp fall eating is a bit different than summer - as is the wine. Check out a few of these foods that will go best with your favorite Missouri wine!

Creamy Parmesan Pumpkin Soup Recipe

Wine Pairing: Seven Springs Winery's Chardonel

Ingredients:2 cups chicken stock
1 cup milk or heavy cream
1 cup pumpkin puree
½ cup parmesan cheese
2-3 cloves garlic, crushed
1 cup shredded cheddar cheese
½ tsp. nutmeg
2 Tbsp. flour
4 Tsp. butter
salt and pepper to taste

Directions
  • Place 2 Tbsp. butter and flour in a large saucepan over medium heat, whisk for 2-3 minutes until it begins to turn a golden brown.
  • Add garlic and sautee 1 minute. Reduce heat to low
  • Stir in stock, cream, parmesan cheese, and nutmeg, cook for 5 minutes.
  • Whisk pumpkin, remaining butter, and cheddar cheese into mixture- simmer for 10 additional moments until cheese is completely melted and all ingredients incorporated evenly.
  • Serve with a crusty bread for dipping or crackers.

Slow Cooker Homemade Beef Stew

Wine Pairing: Seven Springs Winery's Norton

Ingredients:2 pounds beef stew meat, trimmed and cut into 1 - 2 inch chunks
1 -2 teaspoons sea salt
1/2 teaspoon black pepper
1/2 teaspoon onion powder
1/3 cup flour
cooking oil
1 large onion, diced into large chunks
4 cloves garlic, minced
5 tablespoons tomato paste
1 tablespoon soy sauce
4 cups beef broth, homemade or low sodium
1 teaspoons Worcestershire sauce
1 bay leaf
1/2 tsp dried thyme
1 tsp dried parsley
3 medium carrots, peeled and cut into slices
2 ribs celery, chopped
4 Russet potatoes, peeled and chopped into 1 inch chunks
1 large sweet potato, peeled and chopped into 1 inch chunks
2 tablespoons fresh parsley, chopped
Sugar, salt and pepper to taste

Instructions
  1. In a large zip-top bag, combine flour, salt, pepper, onion powder, and thyme. Add meat and shake until well coated..
  2. Browning the meat: (feel free to skip to step 5)
  3. In a large skillet on medium high heat, add cooking oil and brown the meat on all sides. Meat will not be cooked through. (Be sure not to crowd the skillet - you may have to work in batches). Transfer browned meat into the slow cooker.
  4. Put the uncleaned pan back on the stove and add onions and garlic and saute for a minute or two then add the soy sauce and tomato paste until just hot enough to deglaze the pan, about 1 minute. Pour into slow cooker.
  5. With the beef inside the slow cooker, pour in beef broth, Worcestershire sauce, bay leaf, thyme, rosemary, potatoes, sweet potatoes, carrots and celery and stir to combine.
  6. Cook on low for 7 to 8 hours or high for 3 to 4 hours, stir about half way through.
  7. Adjust seasonings with sugar, salt, and pepper if necessary and serve hot with fresh parsley.

Easy & Comforting Ham & Potato Soup

Wine Pairing: Seven Springs Winery's Dry Vignoles

Ingredients
3 1/2 cups (about 2 large) russet potatoes, peeled and diced medium
1 1/2 cups (9oz) cooked honey ham, diced medium*
1/2 cup celery, diced small
1/2 cup onion, diced small
4 cups (2 15oz cans) chicken broth
5 tablespoons butter
1/4 cup and 1 tablespoon (44g) all-purpose flour
2 cups milk
1/4 teaspoon black pepper
Salt

Instructions:
Boil
In a large pot, combine potatoes, ham, celery, onions, and chicken broth. Bring to a low boil and cook over medium heat until vegetables are fork-tender, 10 to 15 minutes.

Make the roux
In a medium saucepan, melt butter over medium heat and whisk in flour. Cook, stirring constantly until flour is golden, about one minute. Slowly add in milk, continuing to stir so that no lumps form and cook until mixture is thick, about 5 minutes.

Combine
Pour flour and milk mixture into the soup and stir. Add pepper, and salt to taste.
Serve and enjoy.

Foolproof Pumpkin Pie

Ingredients:1 (15 ounce) can pureed pumpkin
1 (14 ounce) can Sweetened Condensed Milk
2 large eggs, slightly whisked
1 teaspoon ground cinnamon (rounded)
¼ teaspoon ground cloves
½ teaspoon ground ginger
½ teaspoon ground nutmeg
½ teaspoon salt
1 (9 inch) pie crust (bonus points for homemade!)

Instructions:
  1. Preheat oven to 425°
  2. In a small saucepan, heat pumpkin, spices and salt over low heat. The pour into another bowl to cool to room temperature. [This step is optional, but I think it makes the canned pumpkin taste closer to fresh pureed pumpkin.]
  3. Whisk all ingredients except piecrust together in a medium bowl until combined. Make sure there are no streaks of egg white because those will show up in the final product!
  4. Pour into crust and bake at 425° for 15 minutes.
  5. Reduce heat to 350° and continue baking 35 to 40 minutes or until a sharp knife inserted 1 inch from the center comes out clean. If you don’t want to poke your pie, which will cause it to crack as it cools, you can jiggle it. It is done when only the center (1 inch diameter) jiggles. The pumpkin pie will set perfectly if allowed to cool completely prior to cutting.
  6. Refrigerate in a sealed container or covered with foil. It will also keep for several days at room temperature if you prefer.

Apple Crisp

IngredientsFor the crumb topping:
1/2 cup flour
1/2 cup old fashioned oats
1/2 cup brown sugar
1/2 tsp baking powder
1/4 tsp ground cinnamon
dash of salt
1/3 cup unsalted butter, diced into small chunks
For the Apple filling:
3-4 large Granny Smith apples, peeled and sliced thin
3 Tbsp butter, melted
2 Tbsp flour
1 Tbsp lemon juice
3 Tbsp milk
1/2 tsp vanilla extract
1/4 cup brown sugar
1/2 tsp ground cinnamon
dash of salt
Serve with Vanilla Ice Cream and Homemade Caramel Sauce

Instructions
  1. Preheat oven to 375 degrees F.
  2. In a medium size bowl combine the crumb topping ingredients with a fork or pastry blender until it resembles small crumbs. Refrigerate while you prepare the apple filling.
  3. For the Apple Filling: In a small bowl, combine melted butter and flour until well blended. Add lemon juice, milk and vanilla and stir well. Stir in brown sugar, cinnamon, and salt. Pour butter mixture over apples and toss to coat. Pour apple mixture into an 8x8-inch baking dish and spread into an even layer. Sprinkle crumb topping evenly over the apples. Bake for 30-35 minutes or until golden brown and top is set. Remove from oven and allow to cool for at least 10 minutes before serving.
  4. Serve with Vanilla Ice Cream and Homemade Caramel Sauce
