Fall Days Need Cool Wines

The weather is FINALLY starting to cool down and we are LOVING it! There’s something so perfect about kicking back on a beautiful patio with the cool breeze blowing past you, the first few fall leaves blowing across the deck, and a cold glass of your favorite Missouri wine in your hand. This picture can either include a few of your favorite friends to laugh with, or absolutely no one except you, wine, and a book - either way you have it, wine is the common denominator. So we’re going to share a little bit about each of our wines so that you know what you’ll be getting into *wink*.


Lake Of the Ozarks Winery

Dry Vignoles
Aromas of Tangerine and oranges. Crisp vibrant acidity precedes a long and refreshing finish.

Chardonel
Light to medium straw color. Medium body, fruity with toasted oak.

Traminette
Light straw with green hues. Light bodied, with a fruity yet off dry finish.

Vignoles
Mid straw color with olive green tone. Flavorful bodied, peach, melon & citrus.

Spring Fling
Light straw color with a lime green rim. Light bodied with fruity, citrus & lychee.

Moscato Sparkling
Brilliant, light straw, tropical fruit & flowers. Light bodied, fruit forward sparkling finish.

Blushing Springs
Sparkling red wine, sweet berry aromas with a semi sweet finish.

Spring Red
Semi sweet red with hint of black cherry and a velvet finish.

Syrah
Aromas of currant, blackberry, black pepper with a subtle vanilla oak finish.

Norton
An opaque deep plum color, tobacco, oak. Full bodied, spicy smooth persistent finish.

Sangria Rojo
A light, refreshing blend of sprite, orange juice, and Dry Rougeon wine

Beautiful deep plum color with refreshing, Crisp fruit flavors & a distinct sweet finish.

Who Thought to Squish Grapes to Make Wine?

The History of Winemaking 


Since wine dates back thousands of years, it is hard to credit any single person with the invention or discovery of wine. Scientists and researchers believe that wine was discovered by an ancient people when they found that their grapes had spoiled and fermented. Many believe this is when the process of wine making began and there are several different stories or myths about wines origin. Here are several of the most popular fables according to Wine.LovetoKnow.com:

Wine History Myths


1. Dionysus - One of the most well known wine fables comes from Greek mythology. This tale says that Dionysus, son of Zeus and his mistress Semele, invented wine while living in the ancient Mount Nysa amongst nymphs. Dionysus is often referred to as the "God of Wine" for this reason.

2. The Perisian Women - Many folklorists are crediting women for inventing of discovering wine. There are two different versions of this story:
  • A Persian Princess had found herself out of favor with the King of Persia. She then attempted to commit suicide by consuming a jar of spoiled grapes. However, rather than dying, she found herself feeling better and acting a lot happier instead. Eventually she passed out and when she woke, she took her findings to the king. He became so enamored with the new drink that not only was the princess back in his good graces, he decreed that all grapes frown in Persepolis would be devoted to winemaking. 
  • A Persian woman had a horrible headache and decided to drink a from a jar she used to store grapes. The grapes in the jar had fermented, causing the woman to become intoxicated. She then passed out and when she woke, her headache was gone.

3. Noah - In the Book of Genesis in the Christian Bible, the production of wine is mentioned following the Great Flood, when Noah drunkenly exposes himself to his sons. 

Wine History Facts 

  • The first written tale of wine is said to be in the Old Testament of the Christian Bible. The book states that Noah planted vines and made wine.
  • Fossilized grapes vines have been dated by Scientists at 60 million years old.
  • The oldest archaeological evidence of wine making is the Haji Firuz Tepe wine jar, found in modern day Iran. The Haji Firuz Tepe wine jar, along with a wine press, known to be a wine press due to its tartaric crystal and tannin residue, was dated to 6000 B.C.
  • The craft of winemaking was passed down for generations through families and apprenticeships. There were no written records about viticulture or wine making for nearly 5,000 years after wine was discovered. 
  • Historians believe that Phoenicians were the ones who spread their wine making knowledge to ancient Greece and Italy.
  • Christian monks are credited with France's reputation as one of the best wine making countries in the world. It was their meticulous records about grape varietals, terroir and growing methods that allowed France to perfect and develop its wine making skills.

While we will never agree on who actually "invented" wine, one thing is true: wine has been around since the beginning of time and we should just appreciated that someone discovered this magical drink we all love today! Lake of the Ozarks Wine Trail

The area has seen a renaissance in craft wineries at the Lake of the Ozarks over the last decade. Scenic beauty paired with fine wine and gourmet food make for a memorable experience regardless of the season. Seven Springs Winery invites you to check out this newly formed Missouri wine trail.  What a fun way to spend an afternoon, day or even an entire weekend!

Missouri Wine History


Missouri is known for it’s rich heritage as a wine producing state. The area became known as “Missouri Rhineland” referring to it’s similarities to that region in Germany and the influence of the German immigrants on the industry in the 1800s.  In the mid-1880s, more wine was produced by volume in Missouri than in any other state. Due to prohibition and the growth of the California wine industry, Missouri wineries today tend to be small and more focused on crafting their wine in the old world traditions.

Charity Fundraising Event


The newly formed Lake of the Ozarks Wine Trail will be holding a charity fund raising event November 1st at The Landing on Main Street from 1-5 PM.  All of your favorite local wineries, including Seven Springs Winery will be providing samples of wine paired with your favorite holiday foods.  The cost of the event is $10 which includes a souvenir wine glass plus food and wine samplings from each winery.  A portion of the proceeds will go to Central Missouri Food Bank.  Bring some canned goods and come enjoy live music by Samaria Grace!

The wine throughout the state is among the best in the world and because scarcity, it’s also one of the best kept secrets. Featured Wine: Syrah

Our Winery at the Lake of the Ozarks is home to many great varieties of wine, including Syrah! Syrah is one of the world's most popular and widely planted red wine grape varieties.  It is a dark skinned berry that produces deeply colored and concentrated, rich, red wines with the ability to age and evolve for years or even multiple decades.  Typical scents include blackberries, plumbs, black cherries, flowers, spice, earth, chocolate, licorice, blueberry, pepper and truffles.  While it is planted all over the world, more Syrah is planted in France than in any other country!

History of Syrah


Syrah grapes are the offspring of two ancient varietals that individually never gained mass popularity. It was created when Dureza, a dark skinned berry was crossed with Mondeuse Blance, a white skinned grape.  How long Syrah grapes have been in existence is not known, but today Syrah continues to gain popularity.  Today Syrah is ranked as the world's 6th most planted grape!

We had to change the location of our wedding a week before it was supposed to happen. Seven Springs Winery had a cancelled wedding for that night so we were so lucky that they were available. I just wanted to thank you for showing my friends and I such an amazing time on Saturday. This winery is amazing! I have been to Napa Valley to many wineries and this one tops them all!!! We visited the winery on a Bachelorette Party. There were 9 girls total. The shuttle service picked us up at the condo we had rented and dropped us off when we were done...we did not have to worry about driving at all! I would highly recommend this winery to all of my friends...in fact, my own Bachelorette Party is coming up and I've decided I want to have mine there as well! Grapes 101: Growing Grapes for Wine

There's a lot more to Missouri wine making than just picking up some grapes, squishing them and letting the juice sit for awhile.  You need to pick a grape variety that is good for wine making, plant those grapes, tend to the grapevines and harvest them to eventually begin actually making your wine at Lake of the Ozarks. Selecting Grape Varieties 


Wine quality is dictated mainly by the grapevines, not by the person actually making the wine.  The better the grapes you have, the better your wine will be.  The grape varieties you choose to plant should depend on the type of wine you want to end up with, as well as the climate and location in which you will be growing them.  Red wine is much easier to make than white wine, but the choice boils down to whichever you prefer.  For white wine, Seyval Blanc is among the best. For red, Chancellor and Chambourcin are excellent choices.  The best grapes come from the classic European wine grape, Vitis vinifera which can only grow in regions with warm, dry summers.  This is why California is such a paradise for wine making.  Although the Southeast is warm enough to grow these grapes, the dampness can cause mildew, rot and Pierce's disease. 

How to Grow Grapes 


If your grapevine roots stand in water they will die or at the very least won't produce good grapes, so be sure to choose a sloped site for your vineyard.  Site your vines on a southeast or southwest facing slope so their leaves can soak up the sun.  Sunlight powers the photosynthesis, driving the process that fills the grapes with sugars, which after fermentation become alcohol.  Since the grape skin contains all the flavor and color, you actually want tiny grapes with almost all skin and no juice.  This translates into concentrated, rich color and flavor in the juice, and ultimately in the wine.  Planting grapes in nutrient-poor and even try soil, will stress the vines, keeping the vine vigor down and producing small grape berries, which is exactly what you want! 

Planting Grapevines


You want to plant your vineyard toward the top of a slope and run the rows north and south so that the grapes get even sun as the light shifts from the east to west during the day.  Vines are best spaced 6 feet apart in rows 8 feet wide.  You should plan on roughly a gallon of wine per vine that you plant, so be sure to plant extra to account for a small crop or the loss of grapes due to birds, insects, hail or rot.  For a detailed example of a possible vineyard layout, visit: http://www.motherearthnews.com/real-food/growing-grapes-and-making-homemade-wine-zmaz03amzgoe.aspx?PageId=2#axzz37qFAA1BI

Tending to Grapevines


You will have the most work in the first year.  You will need to select the strongest shoot and tie it straight up, attaching it to each wire it reaches with a loose piece of string.  Don't use wire to tie it because it can damage the tender shoot.  You'll then remove shoots that arise from the roots or the vine, leaving only those that arise from your selected strong shoot.  In the dormant season, prune the strong selected shoot back to the middle wire, keeping it tied there and prune off any side shoots that arose the previous summer.  When the vine's buds begin to grow in the spring, select one on each side of the strong upright shoot and loosely tie them horizontally to the lowest wire as they grow. These will become your vine's arms, from which all the fruiting canes will grow in future years.

Harvesting Grapes 


While tasting the grapes may seem like a great way to tell if they're ready for harvesting, you may want to invest in a hydrometer, which measures the specific gravity of liquids.  This will tell you the sugar content of the berries; a specific gravity between 1.095 and 1.105 is ideal.  By sampling the grapes after measuring, you will know what the grapes taste like at their optimum harvest state.  You also want to examine the seeds.  You are looking for dark seeds, but if they are green, you'll want to let them hang. However, don't let them hang any longer if the specific gravity reaches 1.105 because your wine will then be overly alcoholic and unbalanced.

Featured Wine: Dry Rougeon

Seven Springs Winery has a wide variety of wines to fit everyone's differing palettes.  The next Lake of the Ozarks wine in our Featured Wine series is the Dry Rougeon.  Be sure to check out this delicious red wine next time you visit our Winery at the Lake of the Ozarks!  

The Rougeon Grape


Rougeon is a dark-skinned French-American hybrid grape, known for its ability to make simple, tasty wine. The vine produces medium-sized compact clusters of fruit with a brilliant red hue, making it an ideal blending ingredient. Although the grape vines are hardy, production can be erratic causing as little as twice a year or once every two years.

Like all grapes, Rougeon is susceptible to disease, particularly downy mildew and powdery mildew. These diseases have the potential to reduce vine growth, yield, quality and winter hardiness.  Black rot and botrytis, as well as sensitivity to sulfur can also be seen with the Rougeon grapes.

Rougeon Wine


Since this grape is great for blending, it is often used to make port wines. Rougeon grapes are often blended with grapes such as Chambourcin and Baco Noir.  However, many enjoy it all by itself! Varietal Rougeon wines are typically dry, like the version available at our Winery Lake of the Ozarks, but some sweet versions do exist.  Our light bodied Dry Rougeon contains no tannins and has a berry finish.

Fireworks at Seven Springs Winery!

Featured Wine: Traminette

Back in March we discussed all the delicious wines available at Seven Springs Winery and started a series of Featured Wine Blogs!  Today we are going to learn all about Traminette.  Be sure to check out this white wine next time you are at our Lake of the Ozarks Winery.  We offer wine tastings daily, so you can try it before you buy it!

About Traminette

Traminette resulted from the cross of Joannes Seyve and Gewuerztraminer in 1965.  Fruit were first observed in 1971 at Cornell University and the original vine was propagated in 1974.  The vine was initially described as a vigorous and productive green grape with moderately loose clusters.  This late-to mid-season white wine grape has character similar to Gewuerztraminer.

Much more winter hardy than Gewuerztraminer, Traminette is suitable for cool climates and matures early to mid-October.  In warmer areas, increased bitterness and a high pH can become a problem. Bearing large clusters, the grape has good yields in the vineyard and delivers excellent fruit quality. It also has good disease resistence to powdery mildew, black rot and Botrytis.

Aging well, wine produced from this grape develops honey and apricot flavors in two to five years. Traminette has an elegant fruity floral aroma with a wonderful spicy flavor making it pair great with Asian, poultry and seafood dishes.

Get Your Margarita Glasses Ready for Seven Springs' Tequila 101 Class!

It's time for school...a little Adult Education on the Taste Buds!  


Seven Springs Winery will be having a "Get to know your tequila" party!  This horizontal tasting (no, you will be standing upright at the end) will feature education on the fascinating way in which tequila is made.  Yes, there is work in this class, you will have to taste tequila, drink a margarita and eat gourmet Mexican Food!  So bring a friend to help you get through all the hard work!

Augusta Wine Country Trail


When traveling on scenic highway 94 between Defiance and Augusta, you will find nine family-owned wineries. This region is the first designated American Viticultural Area in the United States. Great Northwest Wine Trail
