Thanksgiving Wine Pairing

Thanksgiving is a time to join with family and celebrate with a large feast.  Many of you may have already started preparing the turkey and baking the pies.  Now comes the real question, what type of wine are you going to serve with your Thanksgiving meal?  Seven Springs Winery is here to help, with the perfect Thanksgiving wine pairings!

Turkey and Stuffing


Red wine is the traditional go-to wine for Thanksgiving dinner and our Seven's Red Heaven is the perfect selection!  The refreshing, crisp fruit flavors pair well with the traditional flavors of turkey and stuffing.

Mashed Potatoes


Syrah also pairs well with the herb-infused stuffing and the dark turkey meat, but best of all it compliments the savory taste of the mashed potatoes.  It brings a spicy edge to the table, increasing the complexity, while graciously handling the cornucopia of traditional Thanksgiving flavors.

Green Bean Casserole


The tropical fruit flavors in our light bodied Muscato Sparkling pair well with green beans and squash. Sparkling wines are the perfect go-to wine because of their high acidity and underlying fruit flavors that help cleanse your palate.

Cranberry Sauce


If you're looking for a white wine, our Chardonel is a great choice!  The fruity with toasted oak flavor makes it an excellent companion for cranberry sauce and white turkey meat.

Pumpkin Pie 


For dessert, we suggest either our Vignoles or Spring Fling white wines.  Their fruity, citrus flavors help bolster the pumpkin pie taste.

In the end it all comes down to your preference and that of your guests.  Keep it simple and have at least one red and one white on hand so that your guests can find something they prefer.  Try to avoid super-dry wines, as they can die in the presence of all that fruit, sugar and salt.  Whether you prefer white or red, a Missouri wine with some fruity flavors is the best option for pairing with Thanksgiving dinner. Nibblers

Serves 2-4 People

Spinach & Artichoke Dip
Artichokes and spinach with garlic, baked in a creamy white cheese sauce, served with herbed crostinis. Pairing: Traminette

Mediterranean Pizza 
Spinach, artichokes, roasted red pepper and kalamata olives topped with a blend of Italian herbs & cheese baked on Focaccia Bread. Pairing: Sangria Rojo

Savory Oils Dipping Tree
Three assorted infused oils with Parmesan, served with fresh assortment of breads for dipping. Pairing: Pinot Noir

Meat and Cheese Platter
Sliced summer sausages with aged cheddar, served with an assortment of crackers and crostinis. Pairing: Seven's Red Heaven

Florida Style Crab Cakes
Real house made crab cakes, sauteed in olive oil, topped with a cream seafood sauce.  Served over field greens and topped with walnut nuggets. Pairing: Syrah

Boursin Stuffed Mushrooms
Jumbo mushroom caps, stuffed with garlic-herb Boursin cheese. Topped with mozzarella then baked. Served with pasta salad. Pairing: Vignoles

Grilled Chicken-Apple and Cheddar

Seven Herb Roast Beef
Tender roast beef, aged cheddar, apple wood smoked bacon, red onion with a sweet and zesty BBQ cream cheese spread. Pairing: Pinot Noir

Beef Bourguignon
Tender roast beef with onions and mushrooms sauteed in Norton red wine then rolled into a whole wheat tortilla, with Boursin cheese. Pairing: Norton

Cranberry & Curried Chicken Salad
Unique Turkish Style Chicken Salad with dried cranberries, toasted almond, onion, mild yellow curry and mixed field greens rolled into a whole wheat tortilla. Pairing: Spring Fling

Mediterranean Turkey
Smoked turkey, artichoke hearts, roasted red pepper, field greens, red onions and olive tapenade rolled into a whole wheat tortilla. Pairing: Traminette

6 oz Angus chuck burger, sauteed onion and mushroom, de-glazed in our Norton and topped with melted mozzarella. Pairing: Norton

Creole Chicken Alfredo
This traditional Cajun dish is prepared with grilled chicken, cream and Creole seasonings. Served with side salad and garlic bread. Pairing: Spring Fling

Penne Pesto Pasta
Penne lightly tossed with extra virgin olive oil, pesto and parmesan cheese. Served with side salad and garlic bread. Pairing: Chardonel

4 Tips for Storing Open Wine

Storing your Seven Springs Winery wine at home can be tricky, trying to make sure the temperature doesn't fluctuate too much. However, when that bottle of wine is already open, the task becomes even more difficult. Maybe you're single or your partner doesn't drink wine and finishing that bottle in one night isn't going to happen. Here are several things you can do to keep that wine fresh for a few days even after that cork is popped.

1. Keep Oxygen Out.  


The main issue with trying to save wine once the cork has been removed is that the wine is exposed to oxygen.  The air will flatten your wine, lessening the flavors and aromas.  If you've only drank half the bottle of wine, the wine that's left is exposed to half a bottle of oxygen.  One way to reduce the surface area exposed to oxygen, is to transfer your leftover wine into a half bottle with a screw top lid.  A second option would be to purchase a wine preserver that actually pumps the oxygen out of the bottle.

2. Don't Recork it. 


Placing the cork back into the bottle is probably the first logical solution you can come up with the preserve your open bottle of wine.  However, this is not a good idea because it can taint the wine that's still in there.  If you do have to use the cork rather than a wine stopper or preserver, beware which end of the cork you insert back into the bottle.  While the "clean" side may seem easier to fit into the bottle, the stained side has already been exposed to the wine and it tasted fine.  The "clean" side may not be as clean as you think because it has been exposed to elements outside of the bottle.

3. Store it Upright. 


In addition to moving the wine to a smaller bottle, be sure to store your open wine upright. Storing it upright will minimize the surface area of the wine that is exposed to oxygen.  When a bottle is placed on its side, the exposed surface area increases dramatically if there's extra space in the bottle. This type of storage also reduces the potential mess of a leaky seal.

4. Place in the Fridge. 


One of the most important tips to follow when storing an open bottle of wine is to refrigerate it. You may be thinking that some wine is served at room temperature and therefore should not be placed in the fridge.  While that is true, it's easier to get your wine warmed up than it is to chill it. Think about it this way, wine comes from grapes and you wouldn't leave your fresh produce out on the counter would you?  So why would you leave your wine sitting out to spoil?  Instead, store it in the fridge.  If it is one of those wines that should be served at room temperature, take it out before you start prepping dinner.  Go ahead and pour it into the glasses and by the time dinner gets to the table, it will be room temperature.
