Enjoy Wine & Cheese Day with These Pairings 🍷🧀

Wine and cheese may be one of the most popular pairings in the food world. They both age well, they both pair well, and they are the perfect combination when you’re looking for something sophisticated. Whether you’re having a Missouri wine and cheese tasting party and you’re looking for the perfect pairings, or you just want to have a private event and need to know what goes well with which - we can help with everything! Here is a quick guide to cheese and wine pairing to get you started, don’t forget to come out to the best winery at the Lake of the Ozarks to get your wine stock!


Pair Equally

If you have an intense cheese, you’ll want to pair it with an equally intense wine - don’t worry, they can handle it. Of course, the same applies if you have a delicate cheese. The flavors would be masked if you pair a bold wine with a delicate cheese. This is a key theory when learning how to pair your own wine and cheese varieties. As a general rule, if it is a wine over 14.5% ABV, it’s considered an intense wine and pairs best with an intense cheese. While wines under 12% ABV are considered less intense and they work wonderfully with a delicate cheese.

Think Bold and Aged

Bold wines and aged cheese tend to pair wonderfully together. The reason is that as cheese is aged, it looses its water content and the fat content increases. More fat means it will pair with an even bolder red wine. The high-fat pairs well with the high tannins. Here are a few wine suggestions to pair with your aged cheese.

Norton & Parmigiano - Reggiano, Asiago, and Provolone
Syrah & Grana Padano, Pecorino, and Asiago

Funky & Sweet

Do you like cheese with a funky flavor? Pair them with a sweet wine! Why? The sweetness of the wine will help balance the potency in the cheese and make it taste creamier. The “funk” of the cheese will also help balance the sweet taste of the wine. Here are some suggestions for funk cheese and sweet wine pairings!

Chardonel & Taleggio, Soft Washed-Rind Cheese
Vignole or Norton Port & Stilton, Blue-Vein Cheese, and Soft Bloomy Rind Cheese

When in Doubt …

If you aren’t sure what to get, you can’t go wrong with a firm, nutty cheese. The fat content with counterbalance the tannin in red wine, but enough delicacy to pair with white wines.

Celebrate Hot Dog Day the Right Way - with WINE!

Did you know that July 19th is Hot Dog Day and that the entire month of July is hot dog month? There's nothing better than a delicious hot dog cooked up on the grill, and the only thing that makes it better is serving it with a glass of delicious wine. If you want to add a bit of sophistication to your hot dog today, here are a few of the most popular American hot dog styles and the wine we suggest pairing with them!



Grilled Reuben Dogs from Kansas City

This dog hails from our own state, so it definitely needs a great Missouri wine to be paired with it. It's a classic dog that is topped sky high with corned beef and swiss. Then topped some more with caraway, sauerkraut, and Thousand Island Dressing. Because of the lighter styles of saurkraut and the Thousand Island dressing, along with the Swiss cheese, we think that our Vignoles wine would pair perfectly and that it's Mid straw color with olive green tone and flavorful bodied, peach, melon & citrus flavors would match exactly.

"Bulldog" Hot Dogs from Atlanta

In the Atlanta area, they like to top their hot dogs with a creamy, crunchy slaw. You can also add some spicy chili and mustard under the slaw for an extra boost of flavor! We think that our Chardonel would pair wonderfully with this dog. The light to medium straw color blends with the coleslaw, and the medium body, and fruity - toasted oak flavors balance out all of the flavors.

Chicago-Style Hot Dog

This may be one of the most popular styles of hot dog around, but that doesn't change that the iconic blend of flavors is absolutely delicious. A Chicago dog is topped with fresh tomato, big spears of pickle, hot peppers, sweet onion, and a vivid green relish. We think that our Syrah would pair wonderfully with the flavors in a Chicago dog. The aromas of currant, blackberry, and black pepper, along with the subtle vanilla oak is a great combo for this classic.

Sonoran from Tucson and Phoenix

The area is famous for this hot dog! It's first wrapped in smoky bacon, then topped with pinto beans, onion, mustard, mayo, and chopped tomatoes, onions and jalapenos. We're thinking that our Spring Red would taste delicious with this dog. The semi sweet flavor would pair well with spice in this dog. plus the velvet finish and hint of black cherry would be nice as well.

Ice Cream & Wine Pairings to Keep You Cool🍷🍨

If you haven't noticed - it's hot out there! Summer came in hot and heavy, the temps rose fast, and they've stayed that way for a while now. We may not see a break in sight yet - but that doesn't mean we can't make the most of summer! Here are a few different types of wine you'll want to stick in your fridge before raiding the freezer for your favorite ice cream!


Ice Cream & Wine Pairings to Keep You Cool!

Nestle Drumstick - Chardonel

A little bit of chocolate, some salty peanuts, and fresh vanilla ice cream are the perfect combination on a hot and sunny afternoon. Of course, if you want to make it better, you'll pull out a bottle of Seven Springs' Chardonel to pair with your Drumstick! Our medium-bodied wine pairs perfectly with this type of ice cream because of the fruity, toasted oak flavors.

Snickers Ice Cream Bar - Syrah

There's something summery about snickers anyway, but when it's in ice cream form - now we're talking! Pair that with our Syrah wine to get the perfect combination of chocolate, with a little bit of current and blackberry, black pepper, and a very subtle vanilla oak finish. The flavors will be divine.

Skinny Cow Ice Cream Sandwich - Spring Fling

It's like the summer days when you were a kid - except skinny ... because the biggest difference in the last 20 years is our metabolism! The best part is, you can now pair your favorite childhood ice cream snack with wine - our Spring Fling wine to be exact. This light, white wine has subtle hints of fruity, citrus, and lychee flavors that complement the rich chocolatey tones in the ice cream.

Creamsicle - Dry Vignoles

There's something about a creamsicle that screams summer. Whether it's the citrus flavors, the cold ice cream bar, or maybe a combination of both. Pair that with our Dry Vignoles, and find a magical combination! The dry wine works wonders with the sweet creamsicle, and the aromas of tangerine and oranges, plus the crisp vibrant acidity precedes a long and refreshing finish.

Klondike Bar - Spring Red

What would YOU do for a Klondike bar? Drink Spring Red of course! This really is a no-brainer, but the rich chocolate and ice cream pairs wonderfully with our semi-sweet red wine. The hints of black cherry works wonder with the Klondike bar, and the velvet finish is perfection.


Good Humor Strawberry Shortcake Bar - Blushing Springs

Looking for a delicious summer treat? Strawberry has a magical way of saying "hello summer," and you want to know what else loves summer? Blushing Springs Wine is the perfect way to enjoy the summer because it's a refreshing sparkling wine! Plus, the sweet berry aromas and the semi-sweet finish will pair wonderfully with this ice cream.

Ben & Jerry's Cherry Garcia - Norton

Ben & Jerry's, it's basically everyone's best friend - but when you combine it with our Norton, you'll find that you have the best friend group ever! Our Norton wine has a deep plum color, which will pair deliciously with Ben & Jerry's Cherry Garcia,  and the full-bodied, spicy smooth persistent finish will be superb.

Edy's Mint Chocolate Chip - Moscato Sparkling

Finally, a fan favorite when you're looking for a wine that will aim to please, Edy's Mint Chocolate Chip. If you want to pair the perfect wine with it, try our Muscato Sparkling. It's a light wine with a small hint of fruity and citrus flavors. They will bring out the warm chocolate notes in the ice cream, and the sparkling aspect will be a perfect mix for summer.

Fireworks Spectacular at Seven Springs Winery

It’s time to watch the night sky light up as we enjoy the fireworks spectacular at Seven Springs Winery on Saturday, July 22nd. It’s going to be a grand affair with food, live music, and an incredible view. Keep reading to learn about this fun event that we host every year and why you should come early and stay late.

There is reserved seating available for the fireworks show, for $15 per person, or you can rent a pod for up to 12 people including table services for $250. Be sure to call the winery at 573-317-0100 to make your reservations!

A Day at the Winery

If you are looking forward to coming out to our winery for the fireworks show, you might as well plan to stay for the entire day - because there are so many things you can enjoy while you’re here! From hiking our beautiful trails to kicking back on the patio and relaxing with friends over a bottle of wine, there are many ways you can enjoy your time with us before the fireworks start!

We have many varieties of wine at our Lake of the Ozarks winery and we would love to pop the cork and share them with you. From red to white, the varieties are perfect for your taste preferences - some come out and try some! In fact, we have 13 varieties, from red to white, dry to sweet, and even some sparkling varieties. If you don't know where to start you can try our wines! We offer several options for wine tasting depending on how many you would like ot try. Want to try all of them? We can do that too!

Live Music

We will have our incredible live music out at the winery for you on Saturday, July 22nd. We love having Sax on the Beach out here, and apparently you do too! They are a regular here at our Lake of the Ozarks winery, but we are especially glad to have them for our Fireworks Spectacular! They'll be playing from 2 PM - 6 PM, and then start back up around 7 PM until the fireworks show! If you've never been apart of the Sax on the Beach crowd, you'll be in for a real treat. They are famous performers at the Lake of the Ozarks and beyond - we hope you enjoy them!
