Spring at Seven Springs Winery

We have many fun events planned for you over the next few weeks! From a wine run to a sing along Saturday. It's never a dull moment at the best Lake of the Ozarks winery - especially when wine is involved *wink*. Here are a few dates that you'll want to put on your calendar - because it's going to be FUN.


The Jack Willhite Rock & Roll Comedy Dinner Show

Enjoy the professional rock-vocal impressionist and stand-up comedian, Jack Willhite. He employs a half-ton of guitars, amps, lighting, props, and costumes to bring you absurd, twisted, and hilarious parodies of your favorite rock acts. From AC/DC and 22 Top to Guns N’ Roses and more, you’ll be entertained all evening long.

There will be a three course dinner from the best winery at the Lake of the Ozarks. Enjoy a spring salad with tequila agave vinaigrette, a smoked pork chop with apple chutney, amaretto carrots, and mashed potatoes. The menu ends off with bread pudding for dessert. This all happens on March 3rd, and you only have a few days left to join the fun!

Murder Mystery Dinner Theater

Join the Murder Mystery Misfits for an evening that will be full of laughs and intrigue. You’ll get to enjoy a delicious three course from our delicious chef at Seven Springs Winery. Doors will open at 5:00 PM on April 7th, and the dinner begins at 6:00 PM. Reservations are required for $39 per person. Wicked Wine Run

If you’ve always dreamt of racing through vineyards and trails to find wine at the end of the tunnel - then keep reading! Our newly designed trails wind through fields and woodland hills. It provides a challenging and remarkably surreal adventure in the heart of Missouri.
The Wicked Post Race Party is really where it’s at though! All complete with food trucks, a live band, and obviously - more WINE! Own a Winery Cabin!

The Lake of the Ozarks is nationally famous for summer vacations. The Lake draws a huge crowd who love to relax, eat, drink, and be merry. As the Lake's original winery, we are very familiar with the individuals who both live here year round, and others who come in for short periods of time - and we love you ALL! That is why we created this secluded winery after all - to be a quiet getaway from the hustle and bustle of the Lake. NOW, you can actually own a piece of the winery to enjoy for your own getaways, but also bring YOU a little investment as well. Here are some of the *juicy* details!


The Seven Springs Cabin

As a new venture at the winery, we are now building stunning and cozy cabins right here at the best Lake of the Ozarks winery. They will have a 2 person shower, queen size bed, and a breakfast bar kitchen area. The best part is that they will overlook both the Lake and the vineyard. This is a perfect home away from home, for you, and for over people planning a vacation at the Lake of the Ozarks. Not to mention, this could actually make YOU money!


Get Started

It's pretty easy, really. You can own your very own cabin at Seven Springs Winery for $25,000. You get to stay for FREE and can make a return of $30,000 in just 30 months. We will do the hard part. We rent them out for you, and YOU take the money until you have reached $30,000. If in 30 months you haven't received your investment back, our owner Mike Bleile will buy the balance back from you. As we mentioned before, you can stay for free anytime that we don't already have the cabin rented out, and you only pay the $25 cleaning fee. You'll have your own private retreat to stay at our Lake of the Ozarks winery almost anytime you want.


Vacationing at the Lake of the Ozarks

If you already come to the Lake of the Ozarks regularly (or the winery for that matter!), this could be a great investment for you. These cabins will be beautiful, much like the rest of our Lake of the Ozarks winery. Drink ALL the Wine!

As if we really need an excuse to drink wine, February 18th is Drink Wine Day! It's time to pull out the glasses, chill the bottle and prepare your best speech because this is a day worth toasting to. Of course, if you want to enjoy the best wine at the Lake of the Ozarks, you should definitely come out to Seven Springs Winery to enjoy the day with. We have all of the varieties you love, from red to white, sparkling to dry, and even a special blend. Here are a few fun facts about your favorite vino to get you ready for Sunday!


Drink Red Wine

Did you know that drinking red wine in appropriate doses is better for you than not drinking any at all?? This doesn't actually surprise us, but several human trial studies have shown that moderate red wine consumption is better than none at all. The reason why is because the antioxidants found in red wine can lower incidences of cardiovascular disease, mortality, and type-2 diabetes.

Are All Red Wines the Same?

Well ... there are some red wines that are better for you, amazingly. Mainly because some have higher levels of "good for you stuff" than others. Dry reds seem to be better than the sweet wines, and the wines with lower alcohol content are a little better than the ones with higher percentages. Red wines with higher tannins are better than low tannin wines, too!

How Much Wine Can You Drink?

According to the Wine Institute, Vatican City drinks the most wine per capita at 74 liters of wine per person per year! That's a full two times MORE WINE per capita than Italy!


What Makes Wine Red or White?

For what it's worth, red grapes and white grapes produce the same colored juice - it's just clear! However, the grape's skin is what makes red wine it's red color, versus white grapes making white wine. Red grape skins have several thousand times the anthocyanin pigments, which then turn the wine red in production.

A “cork-tease” is someone who constantly talks about the wine he or she will open but never does.

Oh to Taste the Earth

In the Middle Ages, the greatest and most innovative winemakers of the day were monastic orders. The Cistercians and Benedictines were particularly apt winemakers, and they are said to have actually tasted the earth to discover how the soil changed from place to place.


A chilled glass of wine is one of the most incredible experiences. Especially when you combine that with enjoying a nice appetizer tray, a relaxing atmosphere, good friend, and live music. 🍷ValenWINE & Chocolate Pairings💝

Valentine's Day is right around the corner, and if you haven't gotten something special for the Valentine in your life, you still have time! One of the most popular choices, is obviously chocolate, but what about pairing up some of the favorite chocolate with impeccable wine? At Seven Springs Winery, not only do we have the scoop on the best wine pairings for that box of chocolate, but we also have some information for the best Valentine's Date at the Lake of the Ozarks - so stay tuned!


Pair by Color

When choosing the best Lake of the Ozarks wine to pair with your chocolate, you want to pair by color. White chocolate and white wine always go well together, while the heavy reds go well with bittersweet chocolates. The reason behind this is that the dark chocolates and deep coloured wine have a higher tannin content than their lighter counterparts - and they pair deliciously together.

Pair By Sweetness

Another consideration when pairing your wine and chocolate is to pair based off of sweetness. You'll want to pair your most sweet white wines with your white chocolates and your bittersweet chocolates with your least sweet wines.

A good rule of thumb is to make sure that your wine is always slightly sweeter than your chocolate.


A Few Suggestions

Need a few ideas? Here are some chocolate pairings that will go well with our Lake of the Ozarks wine:

Chocolate: Praline
Wine: Chardonel

From the medium body flavors with the fruity and toasted oak undertones make for a perfect pairing with a praline chocolate. They can have equal sweetness, and if it's a lighter chocolate, you'll find that the wine pairs nicely.

Chocolate: Caramel
Wine: Syrah

Caramel chocolate goes divinely with our Syrah wine. The currant and blackberry flavors will complement it well, while the black pepper and subtle vanilla oak finish is extraordinary with a caramel chocolate. Many caramel chocolates boast of a mid to dark chocolate coating, and our red syrah is a perfect pair.

Chocolate: Berries
Wine: Blushing Springs

When indulging in a berry chocolate, you want something that will be equally sweet and flavorful. This sparkling red wine has sweet berry aromas and a semi-sweet finish. From raspberry to pomegranate, we think this will be a special pair for your next berry chocolate.

Chocolate: Citrus
Wine: Vignoles

Citrus flavored chocolates have both a unique flavor profile, along with a varied sweetness. We think that our Vignoles wine would be a perfect pair, from the mid-straw color and olive green tone to the flavorful body with peach, melon, and citrus.



Valentine's Day at the Lake of the Ozarks

While chocolate and wine are great, you may want to do a little more for the love of your life on February 14th. This romantic dinner will be on February 14th, and reservations can be made from 5 to 8 PM depending on reservations that are available. It's going to be a fantastic three course dinner featuring Caesar salad, 10 oz K.C. Strip and Lobster Tail with garlic mashed potatoes and asparagus, and turtle cheesecake to finish out the evening. Pairing Your Food & Wine 101

If you want to host a delicious meal, while also appearing to be an expert wine connoisseur, learning about food and wine pairing is a must. While there’s a bit of a science to it, the best thing about it is that as long as YOU like the pairing, you’re right. Differences in taste buds could mean that ideal pairing could be a little different, however, there are still a few things that can help you make a no-fail choice when it comes to wine and food pairing. Here are a few suggestions to make you look like an expert.


Sparkling Wines

When serving a sparkling wine, there are a few things to keep in mind. You want to try and pair it with light and/or salty menu options. All the while avoiding red meat, spicy dishes, and cream sauces. Some good pairing suggestions would be halibut, eggs, or oysters, and a good cheese suggestion is gruyere.

Try these varieties from Seven Springs:

  • Blushing Springs


Rich White Wines

These types of wines have a very distinct flavor profile and can be paired with some delicious dishes. They will go great with fatty or creamy dishes, but you’ll want to avoid smoked meats, Asian dishes or tomatoes. A few suggestions for serving would be with a creamy sauce, buttery fish, or a pasta salad. If you are pairing it with a cheese tray, camembert is a great choice!

Dry White Wines

If dry whites are your style, you’re in luck! There are some great menu options that pair well with this type of wine. You’ll want to opt for light and/or tangy choices while staying away from red meat or blue cheese. A few delicious choices would be white meat, salad, or mushrooms. For a cheese pairing, you could enjoy gouda with your dry white!

Sweet White Wines

If you want to pair sweet white with your next meal, you should consider serving spicy and/or sweet choices! You’ll want to avoid foods that are sweeter than your wine and dark chocolate. A few scrumptious choices would be spicy food, curries, or fruity desserts - and if you’re pairing cheese, brie is a fantastic choice!

Light Red Wines

Light red wines go wonderfully with earthy and/or woody menu choices but don’t pair so well with BBQ sauce, smoked foods or salty foods. Because you’re serving a light red, you can opt for white meat, cured meat, or truffles. When pairing cheese, Swiss goes wonderfully!

Medium Red Wines

Rich and/or savory meals are perfection when you want to serve a medium red wine. However, you’ll want to avoid spicy foods, raw fish, or oysters. Red meat, braised dishes, or potatoes pair incredibly well with this wine, and when serving cheese, choose a flavorful gorgonzola!

Bold Red

There’s nothing better than a bold red to set the tone for your meal. With any bold flavors, though, you’ll want to pair them strategically. Pair it with other bold and or/fatty choices, but avoid seafood, egg dishes, and light salads. It can pair well with stew, lamb or pate, and a nice smoked cheddar is perfection.
