Rustic Chic

This trend has been around for a little while now, but it doesn’t seem to be going anywhere anytime soon! From rustic, romantic shots, to burlap and lace, and wooden accents, the rustic style is here to stay. Add extra special finishing touches by keeping things personal with homemade favors, handmade wreaths, and garland, or handwritten cards.

First Look Photos

The first look photo trend is still an extremely popular and a wonderful tradition to incorporate. While it isn’t the original tradition (it started as waiting to see the bride until the ceremony), with many couples needing to take photos before the ceremony, the first look can be an extremely sentimental way make this moment special. Will you incorporate a first look into your wedding day?

Many wedding experts believe that it’s important to keep the guests in one place, meaning that you don’t have the ceremony and one location and then transport everyone to a new location for the reception. It's Beginning to Look a Lot Like Christmas

Do you feel Christmas in the air? While you may not be quite ready to pull out the Christmas tree and deck the halls it IS time to start getting Christmas events on the calendar. At Seven Springs Winery, we love the holiday season, and the best part is when you come host your events at our Lake of the Ozarks venue. Even if you aren't quite in the Christmas spirit, here are a few reasons you should reserve your date with us.


The Holidays Fill Up Fast

it's no joke that when it starts getting closer and closer to December, the weekends fill up FAST. Not just your calendars, either, but our calendar! From November to January, and Thanksgiving to New Year's, we help host a lot of parties, and we want yours to be one of them. Laugh and Wine at the Winery!

The only thing better than laughing hysterically is laughing hysterically with a glass of wine in your hand! One of our favorite events of the season is here again, and we can't wait to see you at the best winery at the Lake of the Ozarks! Comedy's Best Kept Secret is hitting the Seven Spring's stage again, and we LOVE when they hang out with us. It's time to come see what happens when three nationally touring comedians embark on a two-month road trip and perform 50 shows in 50 days - especially when one is at Seven Springs Winery!


Comedy's Best Kept Secret

As if laughing and wining wasn't enough, this comedy tour isn't just good for a few laughs. The show also raises money for the Humane Society - meaning that you can laugh for a good cause. With three great comedians coming out to the winery, you'll want to come and join us. Here is a quick introduction to the three funny guys you'll get to listen to:

Dan Frigolette - New York, NY

Dan Frigolette has been seen on Bob and Tom Show, HBO's Boardwalk Empire, Wendy Williams Show, and the Artie Lange Show.

He got his start in Syracuse NY in a now debunked club in the basement of the Hotel Syracuse called Viva Debris. Now a New York City circuit regular, he finds joy in traveling the country and to small towns, to entertain folks.

His stage prose is energetic and high paced, with a wit that stops hecklers in their tracks. You will remember seeing Frigolette in person and love every minute of it. He travels the country with his pitmatian Tess, raising money for Humane Societies and rubbing people's bellies.


Adam Gabel - Brooklyn, NY

Adam hales from Brooklyn and has won many competitions including the Make Me Laugh competition in Albany in 2016. This is his first year touring with Comedy's Best Kept Secret, and he's really bringing down the house. Other than that, he's a bit of a mystery, so you'll just have to see how funny he is for yourself *wink*.




Nathan Orton - St. Louis, MO

Nathan Orton is a St. Louis comedian who first hit the stage in 2013, at the Funny Bone, and has since appeared at all the major St. Louis comedy clubs. He’s also performed in New York, Las Vegas, Chicago, Indianapolis and Louisville, KY. He has won both St. Louis' Funniest in July at Helium Comedy Club and St. Louis Funny Bone's Best of St. Louis competition in 2014 - he's also the only one to win both as of yet. He says his style is about trimming the fat from his jokes and including material that comes from a place of honesty. Also, making fun of everything is key.

Decanters - Do or Don't?

You've probably seen this on television - it's normally operated by the butler of some rich home and not something you find among the general population - the decanter. What is this fancy sounding object, and how does it affect your ability to drink wine? Well, we're going to do a little discussing on this object known as the "decanter" and how you can use it yourself (even without a butler) and up your wine game!


What is Decanting?

Simply put, the decanter is the object that you use for decanting, and it helps infuse the wine with oxygen. You don't need to decant every type of wine, and generally the older the wine, the less it needs to decant. When you decant a wine, you pour the wine from the bottle to the decanter. You can leave the wine in said decanter for sometimes as long as a few hours (generally when a wine is younger), or a short as thirty minutes (for older wines).

Do You Need A Different Decanter for Different Wines?

Unless you are a wine snob, you most likely won't need a different decanter for your different types of wines. However, if you enjoy the hobby and love collecting kitchen tools - there are certain decanters that work better with certain wines. Before you buy one, though, make sure that it will be easy to use and clean - they may be pretty, but some of them can be incredibly difficult to use!

  • Use a decanter with a wide base if you like full-bodied, red wines.
  • Use a medium sized decanter if you like medium-bodied red wines.
  • Serve your wine in a small to medium-sized decanter that's been chilled if you like light-bodied red wines.
  • While decanting isn't necessary for white and rosé wines, you can use a small chilled decanter if you really want to.

How Do You Decant Wine?

It really is quite simple. You just pour the wine from the bottle into the decanter, making sure that the wine hits the sides of the glass. This will help increase the oxygen exposure in the wine. You can let it decant for anywhere from 30 minutes to 3 hours, depending on the wine that you are using. After that, you can serve the wine directly from the fancy decanter, or you can put it back in the bottle if you want to show off your amazing Lake of the Ozarks wine in its bottle *wink*.

A Whole Day Dedicated to White Wine!

August 3rd is White Wine Day - and we can't think of a better way to celebrate than by grabbing a whole bottle of your favorite Lake of the Ozarks wine! There's nothing better than kicking back with a chilled glass of white wine and a beautiful view (like ours!) after a delicious dinner - and we personally think this is the best way to celebrate a day dedicated to white wine! Another way to celebrate would be to cook up some easy and delicious dishes with your favorite Missouri wine - so here are a few we've chosen to make your day fantastic!

Creamy Chicken in White Wine Sauce (with BACON!)

This creamy chicken recipe is a perfect comfort food, with a classic French-chic flavor. When you want to incorporate white wine into your main dish, this recipe by Recipe Tin Eats can be a perfect choice!

INGREDIENTS
1 tbsp olive oil
2.5lb chicken pieces, bone in thigh & drumsticks are ideal (Note 1)
1 tbsp butter
3 garlic cloves, crushed
1 onion (brown, white, yellow), finely chopped (~1 cup)
5oz bacon, diced
2 cups of Seven Springs Traminette (or a dry white wine)
1 cup chicken broth/stock or water
2 tsp fresh thyme leaves (or 1 tsp dried)
¾ cup cream (pouring or heavy cream, but not low fat cream)

Garnish
Finely chopped parsley

INSTRUCTIONS
Preheat oven to 350F.
Season chicken with salt and pepper. Heat oil in an ovenproof skillet (with lid) over high heat. Add chicken skin side down and cook until golden brown, then turn and cook the other side for 1 minute. Remove chicken from skillet. Drain excess fat from skillet (do not wipe).
Reduce heat to medium high. Melt butter then add garlic and onion. Cook for 3 minutes until softened, then add bacon. Cook until golden.
Add wine. Bring to simmer, scraping the bottom of the skillet to mix the brown bits into the liquid. Simmer for 2 minutes.
Add chicken broth, thyme and return chicken to the skillet, skin side up. Cover with lid or foil, then transfer to the oven. Bake for 60 minutes, covered, then remove the lid and bake for a further 15 minutes to re-crisp the skin. The chicken should be very tender.
Remove chicken or move to the side. Stir cream into sauce and season with salt and pepper to taste.
Garnish with plenty of parsley. Serve with creamy mashed potatoes.

NOTES
1. I used most of 1 chicken, cut into pieces. Bone in thigh fillets and drumsticks are ideal. Breast isn't the best for this because it's so lean and this is a slow cooked dish. Wings are too small and will overcook.

Sautéed Button Mushrooms In White Wine Sauce

This dish will make the perfect side for your chicken with the warm woody flavors of the mushrooms - and of course, the white wine! Check out this delicious recipe by Best Recipe Box.

INGREDIENTS
16 oz (or 1 pound) small button mushrooms
1/4 cup olive oil, divided
4 cloves garlic, chopped or crushed
1 medium onion, minced
1/2 cup of Seven Spring's Chardonel (or other white wine)
1 tablespoon lemon juice
1/2 teaspoon chili flakes
2 tablespoons butter
2 tablespoons chopped parsley
kosher or sea salt to taste
fresh cracked black pepper to taste

INSTRUCTIONS
Brush the mushrooms clean. Keep the mushrooms whole, or if they are large, cut them in half.
Heat large skillet over high heat. Add half of the olive oil (2 tablespoons), then mushrooms. Cook and stir mushrooms until they start to brown and caramelize about 3-5 minutes.
Add remaining olive oil and then add onions and garlic, cook until translucent.
Add wine, lemon juice, and chili flakes. Cook for about 2 minutes or until liquid reduces down a bit.
Add butter and chopped parsley, cook for an additional 1 minute.
Season with salt and pepper. Serve warm.

Zucchini and Tomato Medley with White Wine Butter Sauce

Want to add some fresh veggies and flavor to your white wine dinner? Try this zucchini and tomato medley with a white wine butter sauce! This recipe from Three Olives Branch is a perfect choice for leftover veggies from the garden.

INGREDIENTS
2 Tbsp butter
1/4 cup white onion chopped
2 cloves garlic minced
1/3 cup Seven Spring's Vignoles White Wine
1 large zucchini chopped
2 cups cherry tomatoes (or grape tomatoes, approx 10 oz)
1/2 cup corn
1/4 tsp salt
1/4 tsp pepper
2 Tbsp fresh basil (or green onions)

INSTRUCTIONS
Heat a nonstick skillet over medium high heat.
Add the butter to the skillet. When melted, add the onion and garlic. Cook until translucent, approximately 2 minutes.
Add the white wine if using and reduce by half, approximately 3-4 minutes.
Add the zucchini, tomatoes, corn, salt, and pepper to the skillet. Cook until the tomatoes are just starting to burst, approximately 8-10 minutes. Keep an eye on the heat, you may need to turn it down to medium but I found that medium high was perfect for my stove.
Season to taste with salt and pepper. Toss with the fresh basil or green onion. Serve warm.

White Wine Cake

Every delicious dinner needs a perfect ending with something sweet! Now we introduce the White Wine Cake! Perfectly spicy, perfectly winey by South Your Mouth.

INGREDIENTS
1/2 cup brown sugar
1/2 cup sugar
2 teaspoons cinnamon
4 eggs
3/4 cup vegetable oil
3/4 cup Seven Spring's Spring Fling
1/2 cup water
1 box yellow cake mix
1 3.5-oz (4-serving) box instant vanilla pudding mix

Icing
1/4 cup dry white wine
1/2 cup powdered sugar

INSTRUCTIONS
Grease a standard-sized bundt pan; set aside.
Combine brown sugar, sugar, cinnamon, eggs, vegetable oil, wine, and water in a large bowl or stand mixer and beat until well combined. Mix in cake mix and pudding and mix until smooth and creamy. Pour batter into greased bundt pan and bake at 350 degrees for 45-50 minutes or until a toothpick inserted in the center comes out clean. 

Just before cake is done, make the icing. Combine wine and powdered sugar in a small saucepan and bring to a boil. Boil icing for 2 minutes then remove from heat (icing will be thin). When cake is done, remove from oven and pour hot icing over hot cake, leaving the cake in the pan. Cool cake completely in the pan, then invert onto a plate Store in an airtight container at room temperature.
