FAQs About Wine

The nectar of the gods - at least, that’s how we feel about it! Vino is a beverage that has been consumed for thousands of years. It’s been enjoyed by paupers and princes alike, and yet, there are certainly some questions that surround it. We’ve done a little digging to find some of the most frequently asked questions about wine. There are some pretty crazy ones out there, and then a few that make TOTAL sense! Check out the answers to your wine questions, and don’t forget to ask your own!


Why Is Wine Better Than Beer?

We may be a bit biased to answer this question … However, we’re going to rely on an unbiased higher power (Google) to give us the answer to this question. Unfortunately, the answers aren’t very cut and dry. Some answer whether a beer is more fattening than wine, other ask which is stronger, and some ask how many beers are equivalent to a glass of wine. Basically, the common question behind “which is better” is really, which is healthier. The true consensus is that if you are drinking responsibly, and choosing options that have fewer calories than their counterpart, you can really enjoy whichever beverage suits you most. What Does It Mean When a Wine Has “Legs”?

Did you know that your wine has legs? This doesn’t mean that is will just walk off and leave you, but it can help indicate the alcohol level in your wine! Legs or ‘tears’ will fall at different speeds depending on the alcohol content in your favorite wine. If the ‘legs’ are thicker or slower, it generally indicates a higher alcohol content.


What Wine is Used for Mulled Wine?

When you “mull” a wine, it disguises a lot of the nuances of the taste. You won’t want to pick something delicate because of that. Choose something that is bigger, bolder, and full-bodied. Red wines are the most popular, so if you’re looking for the next Lake of the Ozarks wine to feature in your Mulled Wine recipe, try our Norton! It’s got a deep plum color, along with full-bodied notes of tobacco and oak with a spicy smooth finish.

Which Wine Has The Least Calories?

If you’re looking for a wine with fewer calories, you’ll be better off sticking with whites. White wine tends to have a lower alcohol content than reds do, which in turn can mean fewer calories. With anything, moderation is key so too much of anything will build up in calories. Need a tasty white to try? How about our Vignoles with its mid-straw color and olive green tone! Or maybe our Spring Fling with the light bodied and fruity flavors.

Can Wine Freeze?

The short answer is yes! The longer version of the answer is yes, but … do not freeze your bottle of wine. Alcohol’s freezing point is lower than water, but the water content will begin to freeze, and when it does, it will begin to expand. This can put a lot of pressure on the cork (which could get pushed out) and on the bottle (which could crack). In short, if you want to freeze your wine, put it in ice cube trays first - do NOT freeze your wine bottles!

What Wine Goes With Steak?

If you want to pair your steak with an excellent wine, you won’t go wrong with a luxurious red. From our Syrah to our Seven’s Red Heaven, a glass of these wines would pair wonderfully with your next delicious steak.

Have a Very Vino Christmas!

It’s time to deck the halls and pour some wine because Christmas is right around the corner and we’re ready to celebrate! Do you have your Christmas ham yet or the stuffing and side dishes picked out? If you haven't even begun to think about these things, there’s still time! Here are a few menu items we think sound particularly delicious for your Christmas menu - and they may or may not include our favorite Lake of the Ozarks wine (just kidding, they TOTALLY include our wine!). Merry Christmas!


GERMAN MULLED WINE

There's nothing to get you in the Christmas spirit like a little bit of warm, spicy wine! Try this German Mulled Wine for a fun spin on a Christmas classic. We, of course, suggest using a wine from our Lake of the Ozarks winery to make this delicious recipe from Vegan Heaven.

INGREDIENTS
1 bottle (750 ml) our Norton red wine
2 tablespoons brown rum
2 oranges, cut into slices
2 juice of two oranges
5 cloves
2 cinnamon sticks
2-star aniseed
1/2 cup brown sugar

INSTRUCTIONS
  1. Combine all ingredients in a saucepan and stir well.
  2.  Heat it up for a couple of minutes over very low heat. Make sure not boil the mulled wine because then the alcohol will evaporate and it won't taste right.
  3. Strain through a sieve and serve hot in heat-resistant glasses or mugs.

White Wine Mushroom Bruschetta with Halloumi

Are you looking for a savory appetizer to serve with your Christmas dinner? This bruschetta takes a fun spin on a delicious classic by combining mushrooms and white wine into a delectable combination. Try this recipe by Amuse Your Bouche and then let us know how it turns out - don't forget to use one of our wines!

INGREDIENTS
1 tbsp olive oil
1 lb mushrooms I used a mixture of white mushrooms and chestnut mushrooms, diced
2 cloves garlic minced
1/2 lb halloumi cut into 1/2 cm slices
Small baguette cut into around 9 x 1-inch slices
1/2 cup of Seven Springs Chardonel
1/4 cup single cream
3 tbsp fresh parsley chopped
Salt
Black pepper

INSTRUCTIONS
  1. Heat the olive oil in a frying pan, and add the mushrooms and garlic. Cook over a fairly low heat for 5 minutes, until the mushrooms are soft. Then add the white wine, and bring to a gentle simmer. Cook for a further 5 minutes, until there isn't too much excess liquid left over.
  2. While the mushrooms are cooking, put the slices of halloumi in a single layer in a different, dry frying pan, and place over a medium heat. Cook for around 5 minutes - the halloumi will release some liquid, and once this liquid has cooked off, the cheese will begin to brown. When the underside is nice and golden, flip the halloumi slices over and repeat with the other side (note: this side will cook a lot more quickly than the first side!).
  3. Place the baguette slices on a baking tray and grill (broil) for a couple of minutes each side, until golden brown and crispy.
  4. When the white wine has cooked right down, add the cream, and cook for a couple more minutes until the sauce is thick. Add the fresh parsley, and season with a touch of salt and plenty of black pepper.
  5. To plate the bruschetta, add a slice of halloumi to each piece of baguette, and top with the mushroom mixture and extra fresh parsley. Serve immediately.

Sausage, Cranberry, and Apple Stuffing

Need the perfect side for your Christmas dinner? Try this delicious recipe from Jones Dairy Farm!

INGREDIENTS
1 loaf sourdough bread, cubed (about 10 cups)
1 cup sweetened dried cranberries
1 medium apple, peeled, cored and chopped
2 (12 oz) Jones Dairy Farm All Natural Pork Sausage Rolls
1/2 cup shallots, finely diced
1/2 cup pecans, chopped
1/2 cup fresh parsley, chopped
3 tablespoons fresh sage, finely chopped and divided
1 tablespoon fresh rosemary, finely chopped
1 teaspoon fresh thyme, chopped
1 cup Seven Springs chardonel wine
4 tablespoons unsalted butter
2 cups chicken stock
2 eggs, lightly beaten

INSTRUCTIONS
  1. Preheat oven to 350°F.Place cubed sourdough on 2 baking sheets. Bake 10-15 minutes, stirring bread occasionally until toasted, but not browned. Place toasted bread cubes into an extra large bowl, add cranberries and apples. Set aside. 
  2. Butter 9x13-inch casserole dish. Set aside. 
  3. In a large skillet over medium heat, cook sausage using a spatula to break it up as it cooks. 
  4. Add 1 1/2 tablespoons sage. Cook through, but do not brown. Remove sausage from skillet using a slotted spoon and add it to bowl with bread cubes. Leave 2 tablespoons of sausage drippings in the pan (drain any extra) and add shallots. Cook until translucent; add pecans, herbs and remaining sage to skillet. Cook 2 minutes stirring frequently. Pour the shallot-herb mixture into a bowl with bread cubes. 
  5. Add wine to skillet and scrape browned bits from bottom of the pan as it cooks. Add butter and chicken stock. Bring to boil for 3 minutes, remove from heat and pour over bread cubes in a bowl. Add eggs.Toss gently until combined and pour into prepared baking dishes. 
  6. Cover with foil and bake 40 minutes. Remove foil and bake 15 minutes more.

Roasted Beef Tenderloin with Mushrooms and White Wine Cream Sauce

If you aren't a fan of ham or turkey for Christmas dinner, we're thinking that this delectable roast beef recipe from Half Baked Harvest will be the highlight of your meal. Combine that with the fact that it is made with our Dry Vignoles and you'll be enjoying this to the very last bite.

INGREDIENTS
1 (4-5) pound whole beef tenderloin
2 tablespoons dijon mustard
1/4 cup peppercorns crushed, or fresh black pepper
kosher salt
16 ounces cremini mushrooms halved
1 tablespoon olive oil
2 tablespoons butter

White Wine Cream Sauce
1/2 cup Seven Springs Dry Vignoles
2 tablespoons butter
2 teaspoons chopped fresh thyme
2 cups heavy cream or whole milk
1/3 cup grated parmesan
kosher salt and pepper 

INSTRUCTIONS
  1. Preheat the oven to 475 degrees F.
  2. Rub the beef with mustard and season generously with peppercorns and salt.
  3. Heat a large skillet over medium-high heat and add the olive oil. When the oil shimmers, add the mushrooms in a large skillet and season with salt, and pepper. Cook 5 minutes or until just tender. Remove from the heat and place the beef over the mushrooms. Add the butter to the top of the beef. Transfer to the oven and roast until the beef registers 120 to 125 degrees F for medium-rare/rare, about 35-45 minutes, depending on the size of your roast. It's best to use a meat thermometer.
  4. Remove the beef and mushroom from the skillet to a serving plate and cover will foil. Let rest 10 minutes before slicing.
  5. Meanwhile, make the cream sauce. Place the same skillet used to roast the beef over high heat. 
  6. Add the wine and scrape up any browned bits off the pan. 
  7. Simmer 3-5 minutes or until the wine has reduced by about 1/3 to 1/2. Add the butter and thyme and continue cooking another 2 minutes until the butter has melted into the sauce. 
  8. Slowly pour in the cream and bring the sauce to a boil. Reduce the heat to low and simmer 5 minutes or until the sauce has thickened slightly. 
  9. Remove from the heat and stir in the parmesan. Season the sauce with salt and pepper.
  10. Slice the beef and serve with the warm cream sauce and roasted mushrooms.
These wine cookies will be the perfect addition and finale to your meal. Our recipe comes from An Italian In My Kitchen, and we would love to hear how you like them! They are fast, easy, and made with wine, so they really can't get any better than that!

INGREDIENTS
1/2 cup of Seven Springs Spring Fling
1/2 cup sugar
1/3 cup oil (I used corn oil)
1/4 teaspoon salt
1/2 teaspoon baking powder
2 1/4 cups flour
sugar for coating
1/2 - 1 teaspoon anise seeds (if desired)
INSTRUCTIONS
  1. Pre-heat oven to 350° (180° Celsius) 
  2. In a medium mixing bowl add wine, oil, sugar, salt, and baking powder (add anise seeds if using) mix well, gradually add flour, a little at a time, until it all comes together.
  3. Transfer to a slightly floured flat surface and knead lightly approximately 10 times. The dough will be soft, so don’t work it too much.
  4. Cut off a little dough at a time, roll into a small chubby rope (about 5 inches (13 centimeters long) and bring ends together to form a circle. Dip in sugar and place on parchment covered cookie sheets, bake for approximately 25-30 minutes, or golden in color. Enjoy!

Spring Wedding Trends to Swoon For

We may be approaching the dead of winter, but for those of you who recently got engaged, spring is in the air! Fresh flowers, warm breezes, and green grass will be popping up celebrating your upcoming nuptials with you - and so will Seven Springs Winery. We have the best wedding venue at the Lake of the Ozarks, and we would love to be apart of your beautiful celebration. As you plan your spring wedding, here are a few trends that are popping up just like the tulips will be!


DIAMONDS AND PEARLS

This may seem like a timeless trend, but it's something you will be seeing everywhere, from accents to accessories, to even details on the bridal gowns. Do you want to add these two beautiful gems to your wedding theme?

BLACK AND WHITE

While wearing all black to your wedding may still be a bit shocking to certain generations - adding black accents can be quite stunning. A black lace train on your gown, obviously black tuxes, or black and white roses on your reception tables can be incredibly striking and very trendy this year.

Fall FUN at the Winery

Fall doesn't officially start until September 22nd, but that doesn't mean we aren't getting ready! The Lake of the Ozarks is breathtaking during the fall months, and if you thought our view was amazing before - you'll LOVE it during fall. The rolling hills, the bold orange and red colors, and the crisp air are just a few things we love. Seven Springs Winery ALSO love all of the fun events that are happening at the winery! Mark your calendars because the fun is just getting started.


Grayson Wood

The Lake's original winery LOVES Grayson Wood. He's a hybrid classic of Americana, cowboy songs, country, and southern rock. Entertaining comes easy to this incredible performer, and we can't wait to have him back on Friday, September 29th. He's a Missouri boy at heart, and while his wheels have rolled over most of this great country, we love having him back time and time again. You'll want to get this event on your calendar because we get quite the crowd!


Sax on the Beach

Sax on the Beach is one of our MOST loved performers. They spend the entire summer with us on weekends, and that doesn't change this fall! They will still be performing at the winery on Saturday and Sunday afternoon from 2-6 PM most weekends through October. Bill and Haley would like to invite you out to enjoy an afternoon with them. They'll be featuring old and new favorites alike, but home hungry and plan to enjoy lunch or dinner! the kitchen will close one hour prior to closing.


Doe Camp

While the men are in the woods, the women are at the WINERY! Doe Camp is BACK on November 11th and the best winery at the Lake of the Ozarks will be filled with all types of vendors offering everything under the sun. So while the guys get lost in the woods, it's the perfect time to get lost at the winery for some retail therapy. Jewelry, unique clothes, purses, candles, scented items, and MORE. Get this day on your calendar and get some Christmas shopping done at the same time.

How to Choose a Signature Wedding Wine

As you plan your wedding, there are several decisions to be made. From the colors in your theme to the types of food you serve. There is, undoubtedly, one decision that trumps them all - your signature wine. Maybe we're biased because we have the best wine at the Lake of the Ozarks and wine always comes first, but we believe this decision is quite important. Today we're going to discuss a few things you need to know about your signature wine, and which of our varieties you will LOVE!

This Is Not A Seasonal Decision

While many people believe that wine is a seasonal choice, with red wine being most popular in the fall and winter, and the white wine being more popular in spring and summer. This can be an easy way to decide what you serve, though it really doesn't matter what time of year it is, and has more to do with what you are serving.

Think About Your Menu

Trust your menu, and choose a signature wine that pairs well with your main course! At Seven Springs Winery, we have many varieties of Missouri Wine that will pair beautifully with your meal, but you'll need to know which wines pair the best with your delicacies.

Chicken - If you're serving chicken at your wedding, you'll want a red wine or a white that is on the medium to light end.

Fish - You can't go wrong with a light white wine! They go very well with seafood dishes, and we're sure you will love the combination.

Beef - Strong reds pair well with a strong beefy flavor. We have several varieties that will pair well with your menu selection.

Pork - Bold white is the way to go when you choose pork for your menu.

K.I.S.S - Keep It Simple Silly! 

While it can be easy to get wrapped up in the decisions of which wine to choose, and you may have the opinion of your wine connoisseur guest in mind - keep it simple. One basic white, one basic red, and a bubbly finish should be all you need. Your white wine should be light and refreshing, not complicated. A great choice at Seven Springs Winery would be our Spring Fling - with a light straw color and a lime green rim. Light bodied with fruity, citrus & lychee. For your red wine, choose something a little crisp and a little fruity, like our Spring Red- it's semi sweet red with hint of black cherry and a velvet finish. Do you want to end the night with a sparkling finish? Try one of our two sparkling wines!

Blushing Springs - Sparkling red wine, sweet berry aromas with a semi sweet finish.

Moscato Sparkling - Brilliant, light straw, tropical fruit & flowers. Light bodied, fruit forward sparkling finish.


How Many Bottles?

If you're not sure how many bottles you'll need for your wedding, a good rule of thumb is a bottle per person. So long as you're not having the bottles opened ahead of time, you can return them or keep them for plenty of celebrating afterwords.

If you're doing a toast, you should be about to get about 8 servings from a bottle when done right.

Choose the Right Wine for Your Wedding

If you're still not sure which wine would be the best as your wedding, it sounds like you need to do a wine tasting! Choose From Our Selection of Wine

Red Vs. White - What's the Difference?

While the main difference between these two types of wine is the color, there are actually many differences that go deeper than the color. At Seven Springs Winery, we feature thirteen different wines varying from dark red to light red and several shades of white. If you're looking for the best wine at the Lake of the Ozarks, you can't go wrong with any of our fantastic selections! Check out these delicious differences between red and white wine before you come out and sample them for yourself.


Taste the Tannins

There's a small difference in red and white, and that is known as tannins. Not only does this adjust the flavor of the wine, but also the color and characteristics. Red wine generally contains more tannins than white, which is what causes some of these difference.

Red Wine

You can get red wine, basically from fermenting grape juice. It will often contain the pieces of grapes and even their skin. Because of that, the tannins from the skin stems, and even seeds seep out into the wine which is what can cause the coloring.

White Wine

While you may have assumed that white wine is made from green grapes and red wine is made from red and black grapes, this isn't always the case. White wine is accomplished because the skins, seeds, and stems are not included in the pressing process, thus keeping fewer tannins in the white wine - making it white.

Is There A Difference In Alcohol Content?

In many cases, you will find that the alcohol content in red wine is higher than white. This is caused by the amount of sugar present in the in the wine during the fermentation process. More sugar equals
more alcohol. Generally, the grapes that make a red wine not only have a higher sugar content, but they are allowed to stay on the vine longer than white wine grapes - allowing for a riper grape.

Is There a Body Difference?

No, we're not talking about the way they affect YOUR body, just the body of the wine. You will find that red wines generally have more body, or mouthfeel, because they have higher levels of tannins, high alcohol content, and the process they are fermented is different.
