No Whining On Wine Day!

The best day of the year is right around the corner! May 25th is the official WINE DAY! It’s basically like Christmas for wine lovers. The BEST news is that wine day also falls on our wine bottling day. You can come by the winery, relax on the patio, grab some lunch, drink some wine, and then watch US bottle new wine! In the meantime, here are some fun facts about the health benefits of wine, as well as an overview of the Lake of the Ozarks wines we provide.

Health Benefits That Come From Drinking Wine

Don’t mistake wine for just any other alcoholic beverage. It’s filled with great health benefits. Plus it’s absolutely delicious - but we’re a little biased ;).

Can Improve Lifespan
A Finnish study showed that wine drinkers have a 34% lower mortality rate than beer or spirits drinkers.

Can Improve Heart-Attack Risk
An article in the Annals of Internal Medicine showed that moderate drinkers suffering from high blood pressure are 30 percent less likely to have a heart attack over nondrinkers. That just tells us, bring on the wine!

Can Reduce the Risk of Type 2 Diabetes
A study at Amsterdam’s VU University Medical Center found that moderate drinkers have 3-% less risk that non drinkers of developing type 2 diabetes. This study was done on 369,862 people and spanned 12 years each.

Can Lower the Risk of a Stroke
A study by Columbia University studied 3,176 individuals over an eight-year period showed that the possibility of suffering a blood clot-related stroke drops by about 50 percent in people who consume moderate amounts of alcohol.

We have two varieties that we grow right here at our very own winery, and they are the best Missouri wines you’ll ever try!

Moscato Sparkling
This is a sparkling white wine that is a favorite at our Missouri winery. It’s a brilliant, light straw color with tropical fruit and flowers. It’s light bodied, and has a fruit forward sparkling finish.

Blushing Springs
This is the wine to try if you are looking for a new favorite. It’s a sparkling red wine with sweet berry aromas and a semi sweet finish.

4 Wine Cork Myths

One of the greatest things about wines is that satisfying sound when you pop the cork on a brand new bottle of wine. However, many wineries have been switching to screw caps and plastic closures. There are a lot of myths out there in regards to why this is happening and Seven Springs Winery is here to set the record straight! Here is the truth behind these 4 common wine cork myths:

Myth #1: There is a cork shortage, which has lead to using more screw caps.

There is no such thing as a cork shortage. In fact, there is enough cork to close all the bottles of wine produced for the next 100 years. Consumers are accepting the change under the misconception that cork trees are dying out, but the real threat is the decline in demand. The cork industry is under serious threat since 70% of cork production goes towards wine producing.

Myth #2: Wine cannot be "tainted if closed with a screw cap or plastic.

Wineries are choosing screw caps and plastic closure for financial reasons, not wine quality. About 2% of all screw cap wines are affected by some sort of "taint." Plastic is also not "safe" as many may think. Wine is a solvent due to its alcohol content. When plastic and solvents come in contact, there is leaching (much the same as with the screw cap). Also, recent studies have shown higher than normal levels of endocrine disruptors in wines closed with screw caps because of the plastic seal inside the cap.

Myth #3: Trees have to be cut down to make corks for wine bottles.

The trees are not cut down, they are harvested, by hand, every 9 years. A cork tree that is harvested of its bark will, over its lifetime, absorb 10 tons more CO2 than one not harvested. Cork forests support one of  our planet's highest levels of forest biodiversity and keep 6.6 million acres of the Mediterranean basin from becoming a desert.

Myth #4: Screw caps and plastic are more environmentally friendly than cork.

Screw caps and plastic closures are not sustainably sourced or biodegradable. Mining for bauxite remains one of the most environmentally devastating practices on our planet. The aluminum industry alone uses 1% of all the electricity generated in the world. Contrary to popular belief, screw caps are not recycled here in the U.S. They are too small to be picked up in the sorting facilities and end up in landfills. While plastic closures are recyclable, less than 1% of them ever are. They end up in landfills, being incinerated or floating around in our oceans. Plastic never goes away; it may break down into small particles, but it is here forever.

Our Lake of the Ozarks winery sits atop 160 acres of rolling Missouri foothills between Camdenton and Osage Beach. The winery is less than a 10 minute drive from either location. The covered porch and patio area are ideal for enjoying a glass of wine and admiring the beautiful views. Stop by and see us today!

Featured Wine: Syrah

Our Winery at the Lake of the Ozarks is home to many great varieties of wine, including Syrah! Syrah is one of the world's most popular and widely planted red wine grape varieties.  It is a dark skinned berry that produces deeply colored and concentrated, rich, red wines with the ability to age and evolve for years or even multiple decades.  Typical scents include blackberries, plumbs, black cherries, flowers, spice, earth, chocolate, licorice, blueberry, pepper and truffles.  While it is planted all over the world, more Syrah is planted in France than in any other country!

History of Syrah

Syrah grapes are the offspring of two ancient varietals that individually never gained mass popularity. It was created when Dureza, a dark skinned berry was crossed with Mondeuse Blance, a white skinned grape.  How long Syrah grapes have been in existence is not known, but today Syrah continues to gain popularity.  Today Syrah is ranked as the world's 6th most planted grape!

Food Pairings

Syrah is one of the most versatile wines when it comes to food pairing.  The natural freshness, spice and rich character, coupled with the wide variety of styles Syrah produces, makes it easy to pair. Some of the best dishes to pair it with include:

  • Any roasted, grilled or smoked meat dishes like: duck, beef, veal, sausage and chicken
  • Game
  • Rich braised dishes and stews
  • Cassoulet
  • Grilled Steaks
  • American Hamburgers
  • A myraid of different hard and soft cheeses

Entree: Syrah-Braised Short Ribs

Ingredients:
  • 8 flanken-style beef short ribs, cut 1 inch thick (5 pounds)
  • Salt and freshly ground pepper
  • 1/2 tablespoon each of chopped parsley, oregano and rosemary
  • 1 tablespoon vegetable oil
  • 1/2 pound sliced bacon, chopped
  • 1 large onion, finely chopped
  • 1 carrot, finely chopped
  • 1 celery rib, finely chopped
  • 1 1/2 cups Seven Springs' Syrah wine
  • 1 cup beef broth

Directions:
1. Preheat the oven to 325°. Season the ribs with salt and pepper and sprinkle with the herbs.

2. In a large skillet, heat the vegetable oil. Add the bacon and cook over moderate heat until crisp, about 6 minutes. Using a slotted spoon, transfer the bacon to a medium nonreactive roasting pan. Working in two batches, add the ribs to the skillet and cook over moderately high heat, turning a few times, until richly browned, about 6 minutes per batch. Transfer the ribs to the roasting pan.

3. Add the onion, carrot and celery to the skillet and cook over moderately high heat, stirring occasionally, until lightly browned, about 5 minutes. Add the wine and beef broth and boil, scraping up the browned bits from the bottom of the skillet. Pour the liquid and vegetables over the ribs. Cover and braise in the oven for about 4 hours, turning the ribs once, until the meat is very tender.

4. Transfer the ribs to a deep platter. Strain the braising liquid into a medium saucepan. Skim off the fat and boil the sauce over high heat until reduced to 2 cups, about 3 minutes. Season with salt and pepper, pour the sauce over the ribs and serve.

Side Dish: Fusilli with Carmelized Spring Onions and White Wine

Ingredients:
  • 1/2 cup panko (Japanese breadcrumbs)
  • 3 tablespoons olive oil, divided
  • 2 teaspoons minced garlic, divided
  • 1/2 teaspoon kosher salt, divided
  • 2 cups thinly sliced spring onions (about 1 pound)
  • 1/2 cup Seven Springs' Traminette wine
  • 1/4 cup fat-free, lower-sodium chicken broth
  • 8 ounces uncooked fusilli (short twisted spaghetti)
  • 1 tablespoon kosher salt
  • 1/4 teaspoon freshly ground black pepper

Directions:
1. Preheat oven to 375°.

2. Combine panko, 1 tablespoon oil, 1 teaspoon garlic, and a dash of salt in a small bowl. Spread panko mixture in a single layer on a baking sheet. Bake at 375° for 6 minutes or until golden brown, stirring after 3 minutes. Cool.

Add remaining 1 teaspoon garlic and wine. Increase heat to medium-high; cook 1 minute. Add broth; cook until liquid is reduced to 1/2 cup (about 4 minutes).

4. Cook pasta in boiling water with 1 tablespoon kosher salt according to package directions, omitting additional fat. Drain. Add pasta, remaining salt, and pepper to onion mixture; toss gently. Place about 1 cup pasta in each of 4 shallow bowls; sprinkle each serving with 2 tablespoons panko mixture.

Dessert: Vignoles Cake

Recipe & Photo From: MtNittanyWinery.com

Ingredients:

Directions:
Preheat oven to 350 degrees.  Grease round (or bundt) cake very well and lightly flour.  Blend cake mix, oil, eggs and wine in a large mixing bowl until moistened (about 30 seconds).  Beat at medium speed for 2 minutes.  Pour batter into prepared pan and bake immediately.  Bake for approximately 40 minutes, testing for doneness with a toothpick.  Let pan cool on rack for 15 minutes, loosen around edges with knife or spatula, and knock pan on bottom and sides to loosen.  Remove cake from pan and let cool completely before dusting with powdered sugar.

Featured Wine: Dry Rougeon

Seven Springs Winery has a wide variety of wines to fit everyone's differing palettes.  The next Lake of the Ozarks wine in our Featured Wine series is the Dry Rougeon.  Be sure to check out this delicious red wine next time you visit our Winery at the Lake of the Ozarks!

The Rougeon Grape

Rougeon is a dark-skinned French-American hybrid grape, known for its ability to make simple, tasty wine. The vine produces medium-sized compact clusters of fruit with a brilliant red hue, making it an ideal blending ingredient. Although the grape vines are hardy, production can be erratic causing as little as twice a year or once every two years.

Like all grapes, Rougeon is susceptible to disease, particularly downy mildew and powdery mildew. These diseases have the potential to reduce vine growth, yield, quality and winter hardiness.  Black rot and botrytis, as well as sensitivity to sulfur can also be seen with the Rougeon grapes.

Rougeon Wine

Since this grape is great for blending, it is often used to make port wines. Rougeon grapes are often blended with grapes such as Chambourcin and Baco Noir.  However, many enjoy it all by itself! Varietal Rougeon wines are typically dry, like the version available at our Winery Lake of the Ozarks, but some sweet versions do exist.  Our light bodied Dry Rougeon contains no tannins and has a berry finish.

Food Pairings

With its dry taste, the Rougeon pairs best with the following foods:
  • Aged Cheese
  • Red Meat
  • Pasta Dishes

Next time you're in the area, be sure to stop by Seven Springs Winery for one of our daily wine tastings!  Try to Dry Rougeon you just learned about or if sweet wine is more your style, try one of our many other options for wine at the Lake of the Ozarks.  As you are sipping your wine, admire the breathtaking views of the rolling Missouri foothills that our Lake of the Ozarks Winery has to offer!
